Beef ribs are a staple for holidays and special celebrations! June is a special month with both my husband’s and daughter’s birthdays. To avoid the hassle of preparing separate birthday meals, I decided to host a combined birthday celebration on a weekend close to their birthdays. I wanted to make something truly special that they don’t get to enjoy often. After much thought, I settled on LA Galbi (Korean-style beef short ribs), a dish loved by all ages. This recipe uses 1.5kg of frozen Australian LA Galbi. I’ll guide you through everything you need to know, from thawing and marinating frozen LA Galbi to achieving the perfect grilling result!
LA Galbi Marinade Ingredients (using standard measuring cups)
- 1.5kg LA Galbi (Beef Short Ribs)
- 1.5 cups Soy Sauce
- 1 cup Mirin (or other cooking wine)
- 1 cup Sugar
- 1/2 cup Minced Garlic (approx. 50g)
- 1 cup Pear Juice (or apple juice)
- 1 bunch Scallions, finely chopped
- 4 cups Water
- 2 Tbsp Sesame Oil
- Pinch of Ginger Powder (optional)
Cooking Instructions
Step 1
Thawing Frozen LA Galbi: Soaking the ribs in water for too long to remove blood can leach out the juices, making the meat less flavorful. Therefore, it’s best to thaw them naturally at room temperature for about 2-3 hours.
Step 2
Removing Blood: Once thawed, place the LA Galbi in cold water to remove any remaining blood. Adding 3 tablespoons of sugar to the water helps draw out the blood more efficiently through osmosis.
Step 3
Parboiling: To eliminate excess fat and any gamey odors, briefly parboil the ribs. Submerge the LA Galbi in boiling water, and as soon as the water returns to a boil, turn off the heat. Immediately rinse the ribs under cold running water. This step effectively removes impurities and unwanted smells.
Step 4
Making the Marinade (excluding scallions): In a bowl, combine the soy sauce, mirin, sugar, minced garlic, pear juice, water, sesame oil, and ginger powder. Mix well to create the marinade. The chopped scallions will be added later.
Step 5
Marinating the Galbi: Pour the prepared marinade into a container. Add the chopped scallions and mix them in. Then, add the LA Galbi to the marinade and coat each piece thoroughly. Arrange the ribs neatly in the container.

Marinating and Resting: As you layer the ribs in the container, pour the marinade over them, or alternate layers of ribs and marinade. This ensures the marinade penetrates evenly. Cover the container with plastic wrap or a lid and refrigerate for at least half a day to one full day. The longer you marinate, the deeper the flavor will be.

Marinated LA Galbi: After marinating in the refrigerator for a day, the LA Galbi will be beautifully coated with the rich, savory sauce, looking incredibly appetizing.
Step 8
Grilling the LA Galbi: Place the marinated LA Galbi in a pan and add about 2-3 ladles of the reserved marinade sauce. It’s crucial to cook the ribs carefully to prevent the marinade from burning.
Step 9
Cooking the Ribs: Start with high heat until the marinade boils. Then, reduce the heat to medium. When blood appears, flip the ribs and continue cooking. Flip them back and forth until nicely browned. As the marinade starts to stick to the pan, lower the heat to low. Keep flipping the ribs to prevent burning and allow the sauce to caramelize, infusing the meat with flavor. Cooking slowly over low heat until golden brown will give it a delicious smoky char. A slight char adds to the smoky flavor and deliciousness.

Making LA Galbi Jjim (Optional Stew): If you prefer a stew, place the marinated LA Galbi in a large pot, add just enough water to cover, and simmer for at least 30 minutes until tender. This will result in a tender LA Galbi Jjim.
