Main Ingredients- Pork Neck 500g
- Deliciously Aged Napa Cabbage Kimchi 1 bowl (approx. 300g)
- 1 stalk Green Onion
Seasoning Ingredients- Gochujang (Korean Chili Paste) 1 Tbsp
- Soy Sauce 1.5 Tbsp
- Fine Gochugaru (Korean Chili Powder) 1/2 Tbsp
- Oligodang (Corn Syrup) 1.5 Tbsp (sweetness adjustable)
- Mirin (or Cheongju) 3 Tbsp
- Black Pepper to taste
- Kimchi Brine 1 ladle (for broth)
- Gochujang (Korean Chili Paste) 1 Tbsp
- Soy Sauce 1.5 Tbsp
- Fine Gochugaru (Korean Chili Powder) 1/2 Tbsp
- Oligodang (Corn Syrup) 1.5 Tbsp (sweetness adjustable)
- Mirin (or Cheongju) 3 Tbsp
- Black Pepper to taste
- Kimchi Brine 1 ladle (for broth)
Cooking Instructions
Step 1
Cut the pork neck into bite-sized pieces (about 2-3 cm). Lightly grease a pan, add the pork neck, and cook over medium heat until nicely browned. Once the pork is somewhat cooked, add 2 Tbsp of mirin and stir-fry together to remove any gamey smell and enhance the flavor.
Step 2
When the pork neck is deliciously cooked, add the chopped ripe kimchi (1 bowl) and kimchi brine (1 ladle) to the pan. Adding the kimchi brine will contribute to a deeper, more savory flavor.
Step 3
Now it’s time to add all the seasoning ingredients that will determine the flavor of the duruchigi. Add 1 Tbsp gochujang, 1.5 Tbsp soy sauce, 1/2 Tbsp fine gochugaru, 1.5 Tbsp oligodang, and the remaining 1 Tbsp mirin, along with a sprinkle of black pepper.
Step 4
Stir well with a spatula, dissolving the gochujang, and stir-fry thoroughly until all the seasonings are evenly coated. Stir-frying until the seasonings are well absorbed by the pork and kimchi is crucial for great taste.
Step 5
Once the ingredients are sufficiently stir-fried and the sauce begins to thicken, add the diagonally sliced green onions. Sprinkle with sesame seeds for a glossy finish. (Optional: Drizzle with 1 Tbsp sesame oil at the end for an enhanced aroma.)
Step 6
Quickly stir-fry until the green onions are slightly wilted and all ingredients are well combined. Be careful not to overcook, as the kimchi can become mushy.
Step 7
Serve the finished Pork Neck Kimchi Stir-Fry attractively in a bowl. This main dish is ready! Even though it’s a simple stir-fry, the taste is absolutely ‘thumbs up’! It’s the best rice thief that will earn you praise. Enjoy your meal!
