Main Ingredients- 1/4 head of kimchi (about 1.5 cups)
- 1 can of tuna (150g)
Cooking Instructions
Step 1
Chop the kimchi into bite-sized pieces. You should have about 1.5 cups, which is a little more than a typical bowl of rice. Using slightly aged kimchi will enhance the flavor!
Step 2
Heat 2 tablespoons of sesame oil in a pan over medium heat until fragrant. Be careful not to let it burn.
Step 3
Add the chopped kimchi to the pan and stir-fry over medium heat. Cook until the kimchi softens and its color slightly changes, about 3-5 minutes. It’s best to use medium heat to prevent the kimchi from burning.
Step 4
Once the kimchi is sautéed, stir in 1 tablespoon of sugar. Then, pour in 1 cup (200ml) of water and bring it to a boil over high heat. The sugar helps to balance the sourness of the kimchi and adds a touch of sweetness.
Step 5
When the water starts to boil vigorously, reduce the heat to medium and continue to cook until the liquid has significantly reduced. Let it simmer until about 20% of the water remains. This helps the flavors meld together.
Step 6
Once most of the liquid has evaporated, add the entire can of tuna, including the oil, directly into the pan. The tuna oil will add richness and flavor to the dish. Gently stir and combine the tuna with the kimchi for just 1-2 minutes. Avoid overcooking the tuna, as it can become fishy.
Step 7
Finally, add the chopped green onion (if using) and sprinkle generously with toasted sesame seeds. Your delicious Tuna Kimchi Stir-fry is ready! Serve it over warm rice for a delightful meal.
