Cooking Instructions
Step 1
First, to remove any gamey smell from the chicken wings, bring a pot of water to a boil and add the bay leaves and whole peppercorns. This step effectively helps to eliminate the chicken’s odor.

Once the water is boiling, add the chicken wings and blanch them for about 1-2 minutes. They should be cooked just until the clear juices run from the tips of the wings. Be careful not to over-blanch, as this can cause the juices to escape and diminish the flavor.
