Cooking Instructions
Step 1
First, let’s make the cream base. In a pitcher or bowl, combine 35g of animal-based whipping cream and 35g of plant-based whipping cream. Using a blend of both creams creates a richer and more stable texture.

Add 10g of sugar to sweeten the cream. You can adjust the sugar amount to your preference.

Gently whisk the ingredients together with a whisk. Start with light mixing and gradually increase the intensity as the cream thickens.

Continue whipping until stiff peaks form when you lift the whisk – meaning the cream holds its shape and stands up like a peak. This is typically around 70-80% whipped. Be careful not to over-whip, as it can cause the cream to separate. Ensuring the peaks are firm is key, as shown in the image.

Now, let’s assemble the latte. Prepare a clear glass and fill it about 40% full with ice cubes. Using a good amount of ice helps keep your drink cold for longer.

Pour 110ml of fresh milk over the ice. Pouring the milk first creates beautiful layers when adding the cream later.

Using a ladle or spoon, add about 4 spoonfuls of the thick cream base you prepared onto the milk. Let it spread nicely over the surface.

Brew 2 shots of rich espresso (approximately 60ml). If you don’t have an espresso machine, you can use a Moka pot or prepare it via pour-over.

Carefully pour the freshly brewed espresso over the cream. For an aesthetically pleasing finish, take another spoonful of the cream base and gently place it on top of the espresso, shaping it slightly to form a peak.

Finally, dust a pinch of high-quality cocoa powder through a sieve over the top for a sophisticated garnish and enhanced flavor. Cinnamon powder also pairs wonderfully.
