Tofu and Tuna Pancakes (Star Shape)

Today, we’re making something a little different – Tofu and Tuna Pancakes! Using a star-shaped mold makes them incredibly pretty, and their mild, savory flavor is sure to be a hit with children. Let me introduce them to you now.
Main Ingredients- 100g canned tuna, drained
- 1 egg yolk
- 1.5 Tbsp potato starch
- 1/4 onion
- 30g carrot
- 10cm green part of scallion
- 1 block (approx. 300-400g) firm tofu
Seasoning & Sauce- Salt to taste

Cooking Instructions
Step 1
First, prepare the vegetables. Finely mince the onion, carrot, and the green parts of the scallions. Finely dicing the vegetables will ensure they mix evenly into the batter and contribute a pleasant texture to the finished pancake.
Step 2
Drain the tofu thoroughly; you can press it with the back of a knife or wrap it in cheesecloth and squeeze out as much water as possible. Ensure the canned tuna is well-drained of its oil. In a mixing bowl, combine the drained tofu, drained tuna, minced vegetables, egg yolk, a pinch of salt, and 1.5 tablespoons of potato starch. Knead the mixture with your hands until it becomes sticky and cohesive. A sticky dough will help the pancakes hold their shape when cooked.
Step 3
Using a triangular onigiri mold or any desired shaped mold, form the batter into shapes about 1cm thick. Avoid making them too thick, as this can make it difficult to cook them through. Heat a generous amount of cooking oil in a pan over low heat. Carefully place the shaped batter onto the hot pan. Cook until golden brown and slightly crisp on both sides. The batter might be a bit soft, so it’s best to transfer the shaped pieces directly to the pan after forming them. Cooking over low heat ensures the inside is cooked through without burning the outside. Once done, serve your delicious Tofu and Tuna Pancakes. They are even tastier when enjoyed with optional dipping sauces like Tonkatsu sauce, Teriyaki sauce, or Ketchup.
