Main Ingredients

  • 1 pack (400g) soft tofu
  • 2 pinches of salt
  • 6 cherry tomatoes
  • 2 button mushrooms
  • 1 handful of broccoli
  • 8 tbsp rosé pasta sauce
  • Shredded mozzarella cheese, as needed

Cooking Instructions

Prepare the soft tofu (1 pack, 400g). Remove it from the packaging and carefully cut it into bite-sized pieces (about 2-3 cm) using a knife or cutting mat. Handle the soft tofu gently to avoid breaking it.

Place the cut tofu pieces in a colander. Sprinkle 2 pinches of salt evenly over the tofu. Let it sit for about 15 minutes to allow excess moisture to drain out, which will give the tofu a firmer texture.

Prepare the vegetables that will add color and flavor to the gratin. Halve the cherry tomatoes into thirds (after removing the stems). Wash and thinly slice the button mushrooms. Cut the broccoli into small, bite-sized florets.

Blanch the prepared broccoli florets in boiling water for about 20 seconds. Be careful not to overcook them, as they will become mushy. Immediately rinse them under cold water after blanching to retain their vibrant green color.

Choose an oven-safe, deep dish or gratin pan. Arrange the drained tofu pieces at the bottom of the dish. Spoon 8 tablespoons of rosé pasta sauce over the tofu, ensuring it’s well coated.

Arrange the prepared vegetables attractively over the tofu. Layer the sliced mushrooms, halved cherry tomatoes, and blanched broccoli evenly on top. Consider the color balance for a more appealing presentation.

Finally, generously sprinkle shredded mozzarella cheese over the vegetables. Using plenty of cheese will result in a wonderfully gooey and melted topping.
