Ingredients

  • Tofu noodles 100g
  • Green cucumber 30g
  • Water parsley 30g
  • Yellow bell pepper 1/2
  • Red bell pepper 1/2
  • Carrot 30g
  • Cooked shrimp 50g
  • Pork (for Japchae) 50g

Dressing

  • Soy sauce 1 Tbsp
  • Water 1 Tbsp
  • Mustard powder 1/2 Tbsp
  • Oligosaccharide 1/2 Tbsp
  • Sesame oil 1/2 Tbsp

I usually love Yang Jang Pi, but its high calorie count makes me hesitant. So, I decided to try using tofu noodles instead! This recipe is especially delightful with winter vegetables like water parsley and plump shrimp cocktail, all tossed in a sweet, sour, and spicy mustard sauce to capture the essence of Yang Jang Pi.

For the tofu noodles, I used the wide cut from Pulmuone’s ‘Jigushikdan’ line. Their thickness provides a wonderful chewy texture that’s truly satisfying.

While tofu noodles have less elasticity than regular flour noodles, they are very filling and extremely low in calories, making them an excellent choice for a diet meal. They’re perfect for a light yet satisfying meal.

I’ve prepared water parsley, a star winter vegetable. Cucumbers, carrots, and bell peppers are available year-round, so you don’t need to worry about finding them.

Please julienne all the prepared vegetables. Arrange them neatly on a plate for a visually appealing presentation.

While you can use pre-cooked shrimp cocktail as is, I prefer to lightly sauté them with a little garlic, soy sauce, and oligosaccharide for a delicious sweet and savory kick. You can also stir-fry thinly sliced pork in the same manner and add it for an even richer dish.

Arrange the sautéed shrimp and pork around the julienned vegetables. Generously pile fresh water parsley in the center for a vibrant touch.

Drain the tofu noodles thoroughly, ensuring no excess water remains. This is important to prevent the sauce from becoming diluted.

Place the well-drained tofu noodles in the center of the plate. It looks quite impressive, doesn’t it?

The sauce is the soul of Yang Jang Pi! In a small bowl, combine 1 Tbsp soy sauce, 1 Tbsp water, 1/2 Tbsp mustard powder, 1/2 Tbsp oligosaccharide, and 1/2 Tbsp sesame oil. Whisk well until everything is smoothly combined. You can adjust the amount of mustard to your preference.

Simply pour the prepared sauce over the dish and toss everything together! Yang Jang Pi, which might seem complicated, is incredibly easy to make.
