When you’re on a diet, you sometimes crave foods you wouldn’t normally eat. I suddenly felt like having pasta, but knowing that regular pasta isn’t diet-friendly, I thought about what I could do. Then, I remembered the dried tofu skins I had at home! So, I came up with this ‘Tofu Skin Shakshuka Pasta’. It’s perfect as a special treat during your diet. Of course, it’s delicious even when you’re not dieting.

  • 2 eggs
  • 1 bag mozzarella cheese

First, prepare the vegetables that will add flavor to your pasta. Dice the green bell pepper, yellow bell pepper, red bell pepper, onion, and carrot into bite-sized cubes. Thinly slice the sausages. Slicing the sausages thinly helps them blend well with the other ingredients.

Dice the fresh tomato as well. The tomato juices will meld with the sauce, enhancing its flavor.

Cut the dried tofu skin, which will serve as your pasta, into long strips about 1cm wide. This completes the ingredient preparation. It’s simpler than you might think, isn’t it?

Now, let’s start making the Shakshuka! Heat 3 tablespoons of olive oil in a pan over medium heat. Add 1/2 tablespoon of minced garlic and sauté until fragrant. Sautéing the garlic first will significantly improve the flavor.

Once the garlic is fragrant, add the diced onion and sauté until it becomes translucent and starts to turn slightly golden brown. Sautéing the onions well brings out their natural sweetness.

When the onions are cooked, add the diced tomato and cook for about 2 minutes until the tomatoes begin to soften. You’ll notice the tomato juices starting to release at this stage.

Add the sliced sausages and cook until they are nicely browned. Cooking the sausages adds a savory depth to the dish.

Now, add the diced green bell pepper, paprika, and carrot. Sauté with the other ingredients until the vegetables are slightly tender. To maintain a pleasant crunch, avoid overcooking the vegetables.

When you can smell the fragrant aroma of the bell peppers, add the julienned dried tofu skin. Stir-fry with the other ingredients for about 2 minutes. This step helps the tofu skin absorb the sauce.

Continue simmering until the sauce has reduced by more than half, and about 5-6 tablespoons of sauce remain, coating the tofu skin and vegetables nicely. This reduction is crucial for cooking the eggs and cheese later without the sauce drying out.

Once the sauce has thickened to your liking, remove the bay leaf for easier serving. Taste the sauce and add a tiny bit more salt if needed. If the seasoning is right, proceed to the next step.

Evenly sprinkle 1 bag of mozzarella cheese over the ingredients in the pan. Reduce the heat to low from this point on to prevent the cheese from burning.

In the spaces not covered by cheese, carefully crack 2 eggs. Gently break the eggs so as not to rupture the yolks.

Cover the pan with a lid and let it steam over low heat until the cheese is melted and the eggs are cooked to your desired doneness. This steaming step is important. Having a bit of moist sauce remaining at the bottom prevents the dish from being dry.
