Main Ingredients- 13 cherry tomatoes (approx. 200g)
- 1 stalk of green onion (white part, about 15cm long)
- 3 large eggs

Cooking Instructions
Step 1
First, finely chop the white part of the green onion (about 15cm in length). In a bowl, crack the 3 eggs, add a pinch or two of salt, and whisk them well, breaking up any stringy bits. This prepares the base for delicious scrambled eggs.
Step 2
Rinse the cherry tomatoes under running water to remove any dirt, after removing their stems. Pat them dry and cut each tomato in half. Cutting them ensures they cook evenly and hold their shape nicely in the stir-fry.
Step 3
Heat a pan over medium heat and add a generous amount of cooking oil. Pour in the whisked eggs. As the eggs begin to set, gently scramble them with chopsticks or a spatula until they are softly cooked and still moist. Remove the scrambled eggs from the pan and set aside in a separate bowl. This step helps maintain a tender texture in the final dish.
Step 4
Add a small amount of cooking oil back to the same pan and introduce the chopped green onions. Stir-fry over medium-low heat until fragrant, creating aromatic scallion oil. Once the aroma is released, add the halved cherry tomatoes and stir-fry them until they begin to soften slightly.
Step 5
Push the softened tomatoes to the side of the pan. In the cleared space, add 1 Tbsp of soy sauce and 1 Tbsp of oyster sauce. Let them bubble for a moment to deepen their flavors before stirring them into the tomatoes. This creates a rich, savory sauce base that perfectly complements the tomatoes.
Step 6
Finally, return the reserved scrambled eggs to the pan. Gently stir-fry everything together to combine the eggs, tomatoes, and sauce. Once evenly mixed, turn off the heat and serve immediately. A drizzle of sesame oil before serving can add an extra layer of aroma and flavor.
