Tomato Blueberry Pasta
Create a Delicious Tomato Blueberry Pasta When You Crave Noodles
To help prevent metabolic syndrome, I’ve made a pasta dish with beneficial ingredients, using just a small amount of pasta noodles. This recipe is packed with goodness for your body.
Ingredients- 15+ Cherry Tomatoes (fresh and ripe)
- 10+ Blueberries (fresh or frozen)
- Approx. 37 Pasta Noodles (for one serving, adjust quantity to your preference)
- Olive Oil (to sauté and cook)
- Walnut-Almond Dressing (a little, for added nuttiness and flavor)
- 2-3 Cloves Whole Garlic or 1/2 tsp Minced Garlic (for aromatic flavor)
- Salt (to taste)
- Pepper (to taste)
- Sesame Seeds (a pinch, for garnish and nutty flavor)
Cooking Instructions
Step 1
First, cook the pasta noodles. In a large pot of boiling water, add approximately 37 pasta noodles. Cook them for at least 6 minutes, or a minute or two longer for a slightly softer texture, according to package directions. Once cooked, drain the pasta and reserve about one ladleful of the pasta water. This starchy water will help bind the sauce.
Step 2
Next, sauté the garlic to build flavor for the pasta. Heat a generous amount of olive oil in a pan over medium-low heat. Add whole garlic cloves (thinly sliced) or minced garlic, and gently sauté until fragrant. Add sesame seeds along with the garlic and toast them lightly. Be careful not to burn the garlic; you want to infuse the oil with its aroma.
Step 3
Once the garlic is lightly golden and aromatic, add about two ladles of the reserved pasta water to the pan. The pasta water helps to create a smooth sauce and emulsify the ingredients. Let it simmer for a moment, then reduce the heat slightly.
Step 4
Now it’s time to add the fresh produce. Add the washed cherry tomatoes and blueberries to the pan. While you can add cherry tomatoes whole, for a more integrated flavor and softer texture, it’s best to halve or quarter them before adding. Add the blueberries gently, as they can break apart easily.
Step 5
Finally, season and enhance the flavors. To avoid a bland taste, add a small pinch of salt and pepper to adjust the seasoning. Taste as you go, as it’s easy to add more but difficult to remove. A final drizzle of walnut-almond dressing will add a lovely nutty finish, completing your healthy and delicious Tomato Blueberry Pasta. Toss everything together and serve warm.
