Main Ingredients
- 2 ripe tomatoes
- 50g fresh chives
- 20g onion
- 1 shiitake mushroom
- 40g pizza cheese
- 80g ground pork
Cooking Instructions
Step 1
First, gather all your ingredients. For the ‘Main Ingredients’, you’ll need 2 ripe tomatoes, 50g of fresh chives, 20g of onion, 1 shiitake mushroom, 40g of pizza cheese, and 80g of ground pork. For ‘Seasoning & Spices’, prepare 20g of olive oil, 1 Tbsp of minced garlic, 1 Tbsp of dried parsley flakes, 1 tsp of black pepper (you can adjust this to your preference), and 2 Tbsp of soy sauce.
Step 2
Slice off the top 1cm of each of the two tomatoes, creating a lid. Then, using a spoon, carefully scoop out the inside of the tomatoes to create hollow ‘bowls’ for your dumplings. Set the scooped-out tomato flesh aside, as you’ll use it in the filling.
Step 3
Wash the fresh chives thoroughly and finely mince them into small pieces, about 0.5cm in length, for the dumpling filling. Mincing them finely will make them easier to mix into the filling and to stuff into the tomatoes.
Step 4
Finely dice the onion and shiitake mushroom into small cubes, similar in size to the minced chives (about 0.5cm). The shiitake mushroom will add a wonderful earthy aroma and flavor to the filling.
Step 5
In a mixing bowl, combine the ground pork, minced chives, diced onion, and diced shiitake mushroom. Add the reserved scooped-out tomato flesh to the bowl as well. Mix all these ingredients together to form the dumpling filling.
Step 6
Now it’s time to season the filling. Add 1 Tbsp of minced garlic, 1 tsp of black pepper, and 2 Tbsp of soy sauce to the bowl. Mix everything thoroughly until well combined. You can taste the filling at this stage and adjust the seasoning with salt or more pepper if needed.
Step 7
Carefully spoon the prepared dumpling filling into the hollowed-out tomato bowls, packing it in gently. Heat a generous amount of olive oil in a non-stick pan over medium heat. Once the oil is shimmering, carefully place the filled tomato dumplings into the pan.
Step 8
Sprinkle the pizza cheese evenly over the top of each tomato dumpling. Cover the pan with a lid and reduce the heat to low. Let it cook for about 15 minutes, allowing the cheese to melt and the dumplings to cook through.
Step 9
After 15 minutes of cooking, place the reserved tomato lids back onto the dumplings. Cover the pan again and continue to cook on low heat for another 5 minutes, or until the tomato skins appear slightly shriveled and the filling is tender. Turn off the heat, remove the lid, and sprinkle a small amount of dried parsley flakes over the top for a final touch of flavor and color. Your delicious Tomato Pizza Dumplings are now ready to enjoy!
