Pizza Ingredients- Mozzarella cheese 250g (You can mix regular and block mozzarella for a richer texture, if you like)
- Tortillas (20cm) 3 sheets
- Cocktail shrimp 100g (peeled and deveined, washed)
- Chicken breast cubes 100g (cut into bite-sized pieces)
- Sweet potato 200g (thinly sliced)
- Tomatoes 200g (sliced into about 0.7cm thickness)
- Red onion 130g (thinly sliced)
- Bell peppers (red, green, etc.) 45g each (sliced into about 0.5cm thickness)
- Black olives 30g (pitted and thinly sliced)
Cooking Instructions
Step 1
First, slice the tomatoes to about 0.7cm thickness. Arrange the sliced tomatoes on a baking sheet and bake in a preheated oven at 240°C (465°F) for 15 minutes. Pre-baking enhances the tomato’s sweetness and softens their texture.
Step 2
Wash the sweet potato thoroughly, then thinly slice it about 2-3mm thick. Sprinkle a pinch of salt over the slices, place them on a microwave-safe plate, cover with plastic wrap, and microwave for 1-2 minutes until slightly softened. It’s important not to cook them completely, as they will continue to cook in the oven and you want to prevent them from burning.
Step 3
Core the red and green bell peppers and slice them into thin strips, about 0.5cm thick. Thinly slice the red onion to a similar thickness. These vegetables will add beautiful color to your pizza.
Step 4
Slice the pitted black olives thinly. The olives add a savory flavor that enriches the overall taste of the pizza.
Step 5
Add the cocktail shrimp to boiling water with a pinch of salt and blanch for 1-2 minutes. Once the shrimp turn pink, remove them, rinse briefly under cold water, and drain well. This process helps maintain the shrimp’s firm, bouncy texture.
Step 6
Prepare your mozzarella cheese. I like to mix regular shredded mozzarella with freshly grated block cheese for a richer flavor. If you have block cheese, grating it yourself adds a wonderful depth of flavor.
Step 7
The sweet potato slices, after a brief microwave, will be soft like this. This ensures they stay moist and don’t become too hard when baked in the oven.
Step 8
Have your prepped chicken breast cubes and sweet chili sauce ready. These ingredients will come together to create a wonderfully rich flavor profile.
Step 9
Now it’s time to assemble the pizza. Lay a tortilla on a pan or baking sheet. Using a spoon or piping bag, drizzle the Sriracha hot chili seasoning in a spiral pattern over the tortilla. Add the ketchup…
Step 10
…and spread it thinly and evenly over the entire tortilla using a fork or the back of a spoon. This creates a spicy base that cuts through any richness.
Step 11
Next, spread a thin layer of sweet chili sauce on top. The combination of Sriracha’s heat, ketchup’s tanginess, and sweet chili’s sweetness will create a fantastic flavor balance.
Step 12
Arrange the pre-baked, softened tomato slices attractively over the sauce.
Step 13
Add the thinly sliced red onion over the tomatoes to enhance the visual appeal.
Step 14
Arrange the colorful bell peppers, thinly sliced sweet potato, and the blanched shrimp nicely over the pizza. Loading up on ingredients makes for a more abundant and delicious pizza!
Step 15
Scatter the chicken breast cubes evenly, then generously top with the mozzarella cheese. A generous amount of melted cheese is what makes a pizza truly complete!
Step 16
Finally, sprinkle the sliced black olives here and there for garnish. Adjust the position of the shrimp to make the pizza look even more appealing. Your beautifully assembled pizza is ready!
Step 17
Drizzle a little more Sriracha chili sauce over the cheese. This will add an extra layer of spicy flavor as it bakes, making it even more delicious.
Step 18
Bake in a preheated oven at 180°C (350°F) for about 15 minutes, or until the cheese is golden brown and melted, and the edges of the tortilla are crisp. Adjust the baking time based on your oven’s specifications.
Step 19
Voila! Here is your finished Tortilla Shrimp Pizza, fresh from the oven. Look at that gloriously melted, gooey cheese! Enjoy it immediately while it’s warm and delicious!
