Ingredients
  • 1 stalk fresh scallion (use both white and green parts)
  • 2 fresh eggs
  • 1 pinch fine salt (adjust to taste)
  • 2 Tbsp cooking oil (for frying eggs)
  • 20g unsalted butter (for toasting bread)
  • 2 slices thick-cut bread
  • 1 Tbsp creamy mayonnaise
  • 1 Tbsp tangy ketchup
  • 1 slice processed cheese

Cooking Instructions

Step 1

First, trim any dirty outer leaves from the scallion and wash it thoroughly. Finely julienne the scallion, then soak it in cold water for about 5 minutes to achieve a crisp texture and slightly mellow its pungency. Drain well using a colander to remove all excess water.

Step 2

In a bowl, crack the 2 fresh eggs. Add a pinch of fine salt and whisk until the egg whites are broken down and the mixture is smooth.

Step 3

Add the drained scallion to the whisked eggs and mix gently to combine. The fragrant aroma of the scallions will infuse into the eggs, creating a richer flavor.

Heat a frying pan over medium-low heat and add 2 Tbsp of cooking oil. Ladle portions of the scallion and egg mixture into the pan, forming round patties. Fry until golden brown on both sides to create your egg fritters.

In another pan, or after cleaning the first one, melt 20g of butter over low heat. Once the butter is melted, place the 2 slices of bread in the pan and toast them until golden brown on both sides, adding a wonderful aroma.

Spread 1 Tbsp of mayonnaise evenly over one side of the warm, toasted bread. The creaminess of the mayonnaise will perfectly complement the bread.
