Tteokbokki: The Ultimate Korean Comfort Food

Thanks to my husband, a true tteokbokki fanatic, we enjoy this dish about once a week! It’s even more delicious when paired with the pickled kohlrabi I recently made. This recipe offers the perfect chewy rice cakes coated in a sweet and spicy sauce.

Tteokbokki Ingredients
  • 400g Tteokbokki rice cakes
  • 2 sheets of fish cake (eomuk), about 100g
  • A little bit of green onion
  • 400ml – 450ml water

Sweet & Spicy Sauce
  • 4 Tbsp Gochujang (Korean chili paste)
  • 4 Tbsp Jin Ganjang (Korean soy sauce)
  • 5 Tbsp Oligodang (corn syrup or rice syrup)
  • 2 Tbsp Gochugaru (Korean chili flakes)

Cooking Instructions

Step 1

First, gently rinse the two sheets of fish cake in water and cut them into desired shapes (triangles or squares). (Tip: Briefly blanching the fish cake in boiling water can remove impurities and give it a chewier texture.)

Step 2

Rinse the 400g of tteokbokki rice cakes under running water, separating any stuck-together pieces. If the rice cakes are hard, soaking them in cold water for a bit will soften them nicely.

Step 3

The secret to delicious tteokbokki lies in the sauce! In a bowl, combine 4 Tbsp Gochujang, 4 Tbsp Jin Ganjang, 5 Tbsp Oligodang, and 2 Tbsp Gochugaru. Mix thoroughly until smooth to create your flavor-packed sauce.

Step 4

Now, prepare the pot for cooking. Pour 400ml of clean water into the pot. (Tip: If you’re adding fish cake, consider using about 450ml of water to prevent the sauce from reducing too much.)

Step 5

Add the prepared 400g of tteokbokki rice cakes to the pot and bring them to a boil. It’s crucial to stir occasionally to prevent the rice cakes from sticking to the bottom of the pot. (Caution: Make sure to stir to prevent sticking!)

Step 6

Once the water is boiling and the rice cakes have softened slightly, add the prepared sauce mixture to the pot. Stir well to ensure the sauce coats the rice cakes and the liquid evenly.

Step 7

After the sauce has dissolved, add the cut fish cake to the pot. The fish cake will absorb the delicious sauce and become even tastier!

Step 8

Reduce the heat to medium and simmer until the sauce has thickened to your desired consistency. This is the key step for the flavors to meld beautifully into the rice cakes and fish cake. (Caution: As the sauce thickens, the rice cakes can stick to the bottom, so keep stirring!)

Step 9

Finally, add some chopped green onions to garnish, according to your preference. Your delicious tteokbokki is ready! Serve immediately while warm or enjoy it straight from the pot. Have a wonderful time savoring your spicy and sweet tteokbokki!
