Main Ingredients- 3 sheets frozen tteokgalbi (Korean short rib patties)
- 1 king oyster mushroom
- 1/2 onion
- 1/4 carrot
- 2 Korean green chilies (cheongyang peppers)
Seasoning & Others- 1.5 Tbsp teriyaki sauce
- 1 Tbsp chili sauce
- 2 Tbsp cooking oil
- Pinch of black pepper
- 1.5 Tbsp teriyaki sauce
- 1 Tbsp chili sauce
- 2 Tbsp cooking oil
- Pinch of black pepper
Cooking Instructions
Step 1
First, prepare the vegetables for your tteokgalbi and vegetable stir-fry. Slice the king oyster mushroom, onion, and carrot into bite-sized pieces. Using a variety of colorful vegetables will make your dish look even more appetizing. Adjust the amount of Korean green chilies to your preference for a pleasant spicy kick.
Step 2
Without defrosting, place the frozen tteokgalbi directly into a pan and cook until golden brown. Once the tteokgalbi is cooked through, cut it into pieces suitable for stir-frying. (Tip: If you have any leftover dumplings, you can cook them alongside the tteokgalbi for an even more satisfying meal.)
Step 3
Heat 2 tablespoons of cooking oil in a wide pan over medium heat. Add the prepared onion, carrot, and king oyster mushroom and stir-fry until they are slightly softened. Once the vegetables are tender-crisp, add the cooked tteokgalbi pieces. Pour in 1.5 tablespoons of teriyaki sauce and 1 tablespoon of chili sauce, and stir-fry everything together until well combined and coated.
Step 4
Finally, add the chopped Korean green chilies and a pinch of freshly ground black pepper for enhanced aroma. Stir briefly to ensure all ingredients are evenly coated with the sauce. Your simple yet flavorful and nutritious tteokgalbi and vegetable stir-fry is now ready!
