Main Ingredients

  • Well-fermented Napa Cabbage Kimchi (Kimjang Kimchi) 1/2 head
  • 1 can Tuna (approx. 150g)
  • Chopped Green Onion, a little

Seasoning Ingredients

  • Minced Garlic 1 tsp
  • Gochugaru (Korean chili flakes) 1 Tbsp
  • Olive Oil 2 Tbsp
  • Sugar 1 Tbsp
  • Oligosaccharide (or corn syrup) 1-2 Tbsp (adjust sweetness to taste)
  • Sesame Oil 1 Tbsp
  • Toasted Sesame Seeds 1 Tbsp

Cooking Instructions

Step 1

First, prepare your well-fermented kimchi, which is the foundation of this delicious stir-fry. Chop the kimchi into bite-sized pieces, about 2-3 cm in length. Cutting it into manageable pieces will give it a better texture.

Step 1

Step 2

Open the can of tuna and drain the oil thoroughly by pressing it over a sieve. This helps to remove excess oil, resulting in a cleaner, more savory flavor. Add the drained tuna, chopped green onion, and 2 tablespoons of olive oil to the chopped kimchi. Stir everything together and begin stir-frying over high heat.

Step 2

Step 3

As the kimchi starts to soften and combine with the tuna, add the minced garlic and gochugaru (Korean chili flakes). Continue to stir-fry. For the sweetness, adjust the amount of sugar and oligosaccharide according to your personal preference. If you like it sweeter, feel free to add a little more oligosaccharide.

Step 3

Step 4

Stir-fry for about 5-7 minutes over medium-high heat, allowing all the seasonings to meld beautifully with the kimchi and tuna. It’s important to stir-fry quickly to prevent the kimchi from becoming too soggy. Just before turning off the heat, stir in 1 tablespoon of sesame oil and 1 tablespoon of toasted sesame seeds for a fragrant finish. Your delicious Tuna Kimchi Stir-fry is now ready!
