Basic Ingredients

  • 1500ml Water (approx. 7.5 cups)
  • 1 can Tuna (150g), drained
  • 2 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Doenjang (Korean soybean paste)
  • 2 Eggs
  • 2 handfuls Chives (approx. 60g)
  • 1 Tbsp Minced Garlic
  • 1 paper cup Flour (approx. 80g)
  • 0.5 Tbsp Beef Dasida (Korean beef broth powder)
  • Pinch of Black Pepper

Chueotang is renowned as a classic restorative soup, celebrated for its energy-boosting and strengthening properties. It’s believed to help with vitality, bone health, skin beauty, anti-aging, and even vision protection. However, even the most beneficial ingredients are useless if they don’t taste good! That’s why my mother created her special Chueotang recipe, which uses tuna instead of loach to achieve that delicious taste. Let me share her secret to invigorating your whole family!

First, pour 1500ml of water into a pot. Add 2 tablespoons of gochujang and 1 tablespoon of doenjang. To ensure a smooth and refined broth, it’s best to strain the pastes through a fine-mesh sieve before adding them. Whisk everything together and bring to a simmer over medium heat.

While the water is heating, open the can of tuna and drain out all the oil. Draining the oil thoroughly will result in a much more delicate flavor. Place the drained tuna in a bowl and add 1 paper cup of flour. Gently mix the tuna and flour together with a spatula, being careful not to mash the tuna flakes. The goal is to lightly coat the tuna pieces with flour, like dressing them up!

Once the broth is vigorously boiling, add 1 tablespoon of minced garlic and 0.5 tablespoon of beef Dasida to enhance the flavor. Let it simmer for a moment to allow the seasonings to meld beautifully.

While the soup is simmering, crack 2 eggs into a small bowl and lightly beat them with a fork. Once the soup is boiling, reduce the heat slightly. Then, slowly drizzle the beaten eggs in a circular motion around the edges of the pot. Resist the urge to stir immediately; let the eggs cook undisturbed to create beautiful egg ribbons.

Just before turning off the heat, add about 2 handfuls of freshly washed and chopped chives. Chives are often called a ‘natural vitalizer’ and will infuse the stew with their fresh aroma and nutrients. Finish with a generous sprinkle of black pepper to deepen the overall flavor profile.
