Inspired by the traditional rice snacks enjoyed during festive seasons in our childhood, we’ve created a delightful treat that incorporates the health benefits of ginseng with fresh fruits, making it accessible and enjoyable even for young children. The delightful crunch of puffed rice and wheat is combined with the sweetness of fruits and the subtle, aromatic notes of ginseng. A final drizzle of sweet yuja (citron) syrup adds a bright, refreshing finish. We’ve named this creation ‘Twikitaka’ because the flavors of the fresh fruits and fragrant ginseng playfully pass through your palate, much like a game. Twikitaka Main Ingredients
  • 100g fresh ginseng
  • 4 strawberries
  • 1 kiwi
  • 20g puffed rice cereal
  • 20g puffed wheat cereal

Sweet Syrup for Coating
  • 100g sugar
  • 200g corn syrup
  • 50g water

Refreshing Finishing Sauce
  • 15g yuja (citron) syrup

Cooking Instructions

Step 1

First, thoroughly wash the fresh ginseng and slice it thinly into rounds. Wash the strawberries and kiwi, remove their tops, and slice them into bite-sized pieces. Preparing the ingredients this way will make the candy-making process much smoother.

Step 2

Gently blanch the prepared ginseng in boiling water for just about 10-20 seconds. This quick blanching helps to mellow the ginseng’s slightly bitter taste, making it more palatable for children. After blanching, rinse the ginseng in cold water and drain well to remove excess moisture.

Step 3

Now, let’s make the delicious coating syrup. In a saucepan, combine 50g of water, 100g of sugar, and 200g of corn syrup. Bring to a simmer over medium-low heat. Once the syrup starts to bubble, add the blanched ginseng. Continue to cook over low heat until the syrup becomes thick and flows slowly, coating the ginseng. Once the ginseng is well-coated, add the prepared fruits (strawberries, kiwi) and the puffed rice and puffed wheat cereals in a 1:1 ratio. Quickly mix everything together, ensuring the syrup evenly coats all the ingredients. Spread the mixture onto a flat surface, shaping it as desired, and let it cool completely until firm. Lining the surface with plastic wrap or parchment paper will prevent sticking.

Step 4

Once the Twikitaka has hardened and cooled down sufficiently, cut it into your desired shapes and sizes. Finally, drizzle a bit of sweet and fragrant yuja (citron) syrup over the top for a beautiful finish! The refreshing zest of the yuja syrup complements the sweetness of the Twikitaka, creating a truly special flavor. Enjoy your homemade treat!
