Two Delicious Dishes Made from Anchovy Broth Scraps

On the weekend, I decided to make a batch of anchovy broth. I tossed in all the leftover ingredients from my fridge – anchovies, kelp, radish, green onions, and onions – to make the broth. Initially, I planned to discard the solids, but then I thought it would be a shame to waste them, so I decided to cook with them. This recipe shows you how to transform those humble broth remnants into two delightful dishes.

Anchovy Broth Ingredients

  • 1 handful of dried anchovies for broth
  • 3 slices of radish
  • 1/2 onion
  • 6 pieces of kelp

Radish Side Dish Ingredients

Radish Side Dish Seasoning

  • 1 Tbsp anchovy sauce (fish sauce)
  • Pinch of sesame seeds
  • Sesame oil
  • Small amount of minced garlic

Anchovy and Kelp Salad Seasoning

  • 1/2 Tbsp anchovy sauce (fish sauce)
  • 1 Tbsp red pepper flakes (gochugaru)
  • Pinch of sesame seeds
  • Sesame oil
  • Small amount of minced garlic

Cooking Instructions

Step 1

★ Make Anchovy Broth & Prepare Solids ★
In a pot, combine water with dried anchovies, large chunks of radish, half an onion (you can use the peel too for extra flavor), and kelp. Bring to a boil, then remove the kelp immediately once boiling. Reduce the heat to medium-low and simmer for another 15-20 minutes to create a rich broth. Strain the broth, let it cool, and store it in an airtight container in the refrigerator. This broth is perfect for adding depth to various stews, soups, and braised dishes. Set aside the leftover anchovies, kelp, radish, green onions, and onions from making the broth. Let them cool slightly.

★ Prepare Radish Side Dish ★
Cut the cooled radish scraps into bite-sized pieces (about 2-3 cm). Chop the leftover green onions and onions similarly. In a bowl, combine the cut radish, green onions, and onions. Add 1 tablespoon of anchovy sauce, a small amount of minced garlic, 1/2 tablespoon of sesame oil, and sesame seeds. Gently mix everything with your hands until well combined. This creates a crunchy and flavorful radish side dish. Taste and adjust seasoning if needed with a little more anchovy sauce or salt.

★ Make Anchovy and Kelp Salad ★
Gently rinse the leftover anchovies and pat them dry. Remove the heads and innards – this step is crucial to avoid a bitter taste. Cut the leftover kelp into bite-sized pieces (about 1-1.5 cm), or julienne it for a finer texture. In a bowl, combine the prepared anchovies and kelp. Add 1/2 tablespoon of anchovy sauce, 1 tablespoon of red pepper flakes (gochugaru), a small amount of minced garlic, 1/2 tablespoon of sesame oil, and sesame seeds. Gently toss everything together, being careful not to break the anchovies too much. This results in a chewy and savory anchovy and kelp salad, an excellent side dish for rice.
