Two Delicious Tofu Dishes for a Relaxing Meal: Seasoned Soft Tofu and Kimchi Dubu

My family wanted to go out for dinner on the weekend, but I had to reluctantly refuse because I’m trying to control my diet. Feeling a bit sorry for my family who had to eat at home because of me, I decided to make a couple of side dishes for us to enjoy with a drink! I hope you all have a wonderful holiday. ♥

Kimchi Dubu Ingredients

  • 1 block of tofu
  • Kimchi (1 bowl, measured with a rice bowl)
  • 1 Tbsp cooking oil + 1 Tbsp sesame oil
  • 1 Tbsp sugar
  • 1 can tuna (150g)
  • 1/2 stalk of green onion
  • 3 spicy chili peppers (called ‘ttengcho’)

Seasoned Tofu Ingredients

  • 1 block of silken tofu (or soft tofu)
  • 2 Tbsp red pepper flakes
  • 5 Tbsp soy sauce
  • 2 Tbsp water
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp sugar
  • 1 Tbsp sesame oil
  • 1 spicy chili pepper (ttengcho)
  • 5 cm piece of green onion

Cooking Instructions

[Super Simple Seasoned Silken Tofu] This is quick to make once you have the seasoning sauce! Combine 1 spicy chili pepper (ttengcho), a 5cm piece of green onion, 1/2 Tbsp minced garlic, 5 Tbsp soy sauce, 2 Tbsp water, 1.5 Tbsp red pepper flakes, 1/2 Tbsp sugar, and 1 Tbsp sesame oil to create the delicious sauce.

Place the silken or soft tofu in a bowl and generously top it with the prepared sauce. That’s it for the seasoned tofu! So easy, right?

[Kimchi Dubu] Chop the well-fermented kimchi (about 1 bowl measured with a rice bowl) into bite-sized pieces. If your kimchi isn’t very spicy, you can adjust or omit the sugar.

Slice the green onion (half a stalk) and the 3 spicy chili peppers (ttengcho) diagonally.

Heat 1 Tbsp cooking oil and 1 Tbsp sesame oil in a pan. Add the chopped kimchi and stir-fry it. You can add 1 Tbsp red pepper flakes (optional) and 1 Tbsp sugar at this stage. Continue to stir-fry for 2-3 minutes until the kimchi softens.

Once the kimchi is well stir-fried, add enough water to cover the kimchi and bring it to a boil over high heat. (As I’ve emphasized many times, stir-frying and then simmering makes it much tastier!)

When the water has reduced by about half, add the sliced green onion and spicy chili peppers, and continue to simmer.

When the liquid has mostly evaporated, add the drained tuna. Stir gently for just about 10 seconds, like you’re mixing it in, and your Kimchi Dubu is complete!

Crucially, do not stir-fry the tuna for more than 10 seconds after adding it! Overcooking tuna can result in a fishy smell, similar to mackerel kimchi stew, which can ruin the flavor. Stir-fry briefly to maintain its fresh taste. ^~^

These dishes were so delicious that the two of us finished the entire bowl of soft tofu and the whole block of tofu! We kept going back for more. Haha. Tofu is a great choice because it’s less of a calorie burden, making it a happy meal! Have a wonderful time cooking! ♥
