Ingredients
  • 155g Cake Flour (or all-purpose flour)
  • 50g Unsalted Butter, softened
  • 60g Creamy Peanut Butter
  • 60g Dark Brown Sugar
  • 30g Granulated Sugar
  • 1 Large Egg, room temperature
  • 50g Finely Chopped Peanuts (optional, for texture)
  • 2g Baking Powder
  • 2g Baking Soda
  • 2 Pinches of Salt (approx. 1g)

Cooking Instructions

Step 1

Begin by gathering and measuring all your ingredients. Ensure your butter and egg are at room temperature, as this helps them emulsify smoothly with the other ingredients.

Step 2

In a mixing bowl, cream together the softened butter and creamy peanut butter until smooth and well combined. Use a spatula or whisk for this step; the goal is a creamy, lump-free base.

Step 3

Add both the dark brown sugar and granulated sugar to the bowl. Mix gently until just combined. You don’t need to overmix; the sugars should be incorporated into the butter mixture. (Tip: If you only have one type of sugar, you can use a total of 90g of that sugar.)

Step 4

Crack the room temperature egg into the mixture. Whisk gently until the egg is fully incorporated and the mixture is smooth. Avoid overbeating, which can cause the dough to separate.

Step 5

In a separate bowl, sift together the cake flour, baking powder, and baking soda. Sifting helps to aerate the dry ingredients and prevents lumps from forming in your dough.

Step 6

Gradually add the sifted dry ingredients to the wet ingredients. Use a spatula to gently mix until just combined and no dry flour streaks remain. Be careful not to overmix, as this can lead to tough cookies. Stir in the chopped peanuts (if using) just until evenly distributed.

Step 7

Lay a sheet of parchment paper or wax paper on your work surface. Place the cookie dough onto the paper and shape it into your desired form. A log or a rectangular shape works well for easy slicing. Once shaped, wrap the dough tightly and refrigerate for about 10 minutes to firm up, making it easier to cut.

Step 8

Once chilled and firm, carefully slice the dough log into approximately 2cm thick cookies. Use a sharp knife for clean, even cuts.

Step 9

Arrange the sliced cookies on a baking sheet lined with parchment paper, leaving a little space between each cookie. Bake in a preheated oven at 175°C (350°F) for 10-13 minutes, or until the edges are golden brown. Baking times may vary depending on your oven. Congratulations! You’ve just baked incredibly delicious, crispy, and nutty peanut butter cookies. Enjoy them with your favorite beverage!
