- 1/2 Tbsp soybean paste (Doenjang) for odor removal

Step 1
The foundation of a delicious braised pork ribs dish starts with selecting fresh ingredients! Choose pork ribs that are thick and have plenty of meat attached.
Step 2
To effectively remove any gamey odor from the ribs, fill a pot with water and add 1/2 Tbsp of soybean paste (Doenjang). Bring it to a boil. While there are various methods for odor removal, this one is the easiest and most effective, so I highly recommend it.

As the water begins to boil, you’ll notice foam and impurities rising from the pork ribs. This step helps to clean the ribs thoroughly.
Step 4
Remove the ribs from the boiling water and rinse them thoroughly under cold running water. Ensure all blood and impurities are washed away, then drain them completely. Patting them dry with paper towels is also a good idea. Arrange the prepared ribs neatly at the bottom of your braising pan.
Step 5
Now, let’s make the magical sauce that will define the flavor of your braised ribs! Finely grind 1/2 onion using a blender. In a bowl, combine 3 Tbsp soy sauce, 50g strawberry jam, 1/2 pack apple juice, 2 Tbsp rice wine, 1 Tbsp minced garlic, and a pinch of black pepper. Stir well until all ingredients are thoroughly mixed.
Step 6
Pour about 2/3 of the prepared sauce evenly over the ribs arranged in the pan. Reduce the heat to medium-low, cover the pan with a lid, and let the ribs braise for about 20 minutes until they become tender. This process allows the sauce to deeply infuse into the meat.
Step 7
After 20 minutes, uncover the pan, taste the ribs for seasoning, and add the remaining sauce. Stir the ribs gently a couple of times while continuing to simmer, being careful not to let the sauce burn. This is the key to achieving a perfectly delicious braised pork ribs dish.
