Decades ago, when visiting the Gejang (marinated crab) alley in Shinsa-dong, they always served it with cabbage, seaweed, and this Galchi-sokjeot Ssamjang. I used to eat more of the Galchi-sokjeot Ssamjang wrapped in cabbage than the Gejang itself! I’m not sure if that alley still exists today. Now that I can make Gejang and this kind of Ssamjang myself, and even tastier, I hardly ever visit there. Main Ingredients- 10 Tbsp fermented beltfish gut (Galchi-sokjeot)

Cooking Instructions
Step 1
Wash the cabbage thoroughly and soak it in water to maintain its crispiness.
Step 2
Drain the cabbage and place it in a microwave-safe dish. Steam it for about 1-2 minutes until slightly softened. Be careful not to overcook; just until it wilts a bit is ideal.
Step 3
Finely chop the Cheongyang chili peppers. Rinse them under running water to remove seeds, then squeeze out excess water thoroughly. This step is crucial for a clean flavor.
Step 4
In a bowl, combine the chopped chili peppers and the Galchi-sokjeot. Taste the Galchi-sokjeot first as its saltiness can vary; adjust the amount as needed.
Step 5
