  • 1/4 medium onion
  • 2 small heads of broccoli

Seasoning

  • 1 Tbsp ‘YeonDu’ (or soup soy sauce)
  • Water (equal volume to eggs) approx. 150ml
  • Salt (optional, for adjusting taste)

First, prepare the vegetables. Finely mince the onion. For the broccoli, trim off the florets into bite-sized pieces after washing them thoroughly in water with a few drops of vinegar. Next, crack the 3 eggs into a bowl and whisk them gently until well combined. It’s best to use a microwave-safe bowl that has some depth.

Add 1 tablespoon of ‘YeonDu’ to the whisked eggs. ‘YeonDu’ is a Korean condiment that adds a savory depth and makes the steamed egg particularly delicious. If you don’t have ‘YeonDu’, you can substitute it with 1 tablespoon of soup soy sauce. If you prefer a saltier taste, feel free to add a pinch of salt to adjust to your preference. (Note: Using ‘YeonDu’ or soup soy sauce might slightly color the egg mixture. If you prefer a pure white steamed egg, you can use only salt for seasoning.)

Pour in water equivalent to the volume of the beaten eggs (approximately 150ml) and mix gently to avoid creating too much foam. The amount of water will determine the final texture; if you desire an even softer consistency, you can add a little more water. Stir in the minced onion and prepared broccoli florets.

Now it’s time for microwaving. Cover the bowl loosely with a lid or plastic wrap (if using plastic wrap, poke a few holes with a fork) and microwave for about 8 to 9 minutes. The cooking time may vary depending on the wattage of your microwave. It’s a good idea to start with 6 to 7 minutes, check the doneness of the steamed egg, and then add more time as needed. I use a combination microwave/oven, so mine takes a bit longer. Once your perfectly fluffy and tender steamed egg is ready, enjoy it warm!
