Mochi Dough Ingredients- 100g glutinous rice flour
- 1 Tbsp pumpkin powder
- 80ml hot water
- 1 tsp sugar
Cooking Instructions
Step 1
First, trim the crusts off the bread slices. Then, use a rolling pin to flatten each slice thinly and spread it out. In a large bowl, sift together the glutinous rice flour and pumpkin powder. Add the sugar to the sifted flour and mix well. Place the flour mixture in a microwave-safe bowl. Gradually add hot water while mixing like kneading a dough. (Adjust the amount of hot water based on the dough’s consistency; add more glutinous rice flour if too sticky, or a little more hot water if too dry.)
Step 2
Cover the bowl with plastic wrap and microwave for 3 minutes. After 3 minutes, remove the bowl and thoroughly mix the dough with a spoon or spatula. It’s important to knead it well to ensure the mochi is evenly cooked and has a smooth texture. Cover again with plastic wrap and microwave for another 2 minutes. After a total of 5 minutes in the microwave, your chewy pumpkin mochi dough will be ready.
Step 3
Generously dust a clean work surface or cutting board with cornstarch. Place the hot pumpkin mochi dough from the microwave onto the cornstarch. Shape it into a long rectangular form. Be careful as the dough might still be hot. Divide the dough into 3 equal portions. Lightly roll out each mochi piece to match the width of the bread slices. Place each shaped mochi piece onto a slice of bread.
Step 4
Carefully roll up the bread from one side, enclosing the mochi inside. Roll it firmly like making a sushi roll to create a neat shape. Lightly brush the edge of the bread with water or egg white to seal it securely so it doesn’t unroll. Heat a pan over medium-low heat and melt a little butter. Be mindful of the heat to prevent the butter from burning.
Step 5
Place the rolled bread sandwiches seam-side down in the melted butter. Cook, flipping occasionally, until both sides of the bread are golden brown and slightly crispy. Once the exterior is beautifully toasted, your sandwiches are ready! For an extra touch, you can dust with powdered sugar or garnish with pumpkin seeds for a more attractive presentation.
