Healthy and Tasty Vegetable Cake Recipe

Cake Batter Ingredients
- 160g cake flour (rice flour)
- 1/2 medium onion
- 4 Tbsp canned corn kernels
- 4 slices processed ham
- 1 Korean chili pepper (optional, for a hint of spice)
- 2 large eggs
- 1/4 tsp salt
- 30g sugar
- 1/2 tsp baking powder
- 20g butter
- 20g grapeseed oil
Cooking Instructions
Step 1
Finely chop the onion. If you prefer a more noticeable texture, you can dice it into approximately 0.5cm pieces. For a softer bite, you can mince it even finer. Rinse and peel the onion before chopping.
Step 2
Finely dice the processed ham into similar-sized pieces as the onion, around 0.5cm. You can adjust the size according to your preference.
Step 3
Finely mince the Korean chili pepper. Remove the seeds first. Include it if you enjoy a little heat; omit it if you prefer a milder flavor or if making this for children. Half a pepper is usually sufficient for a mild spice.
Step 4
In a mixing bowl, crack the 2 large eggs. Use a whisk to gently break the yolks and combine them with the egg whites until smooth. Ensure there are no streaks of yolk or white remaining.
Step 5
After whisking the eggs, add the 1/4 tsp salt and 30g sugar. Continue whisking vigorously until the sugar is dissolved and the egg mixture gains a slight volume.
Step 6
This is a crucial step for a light cake! Place the mixing bowl over a pot of simmering water (double boiler method) and continue whisking the egg mixture. Whisk until it turns a pale ivory color and thickens enough to form ribbons that hold their shape for a few seconds when the whisk is lifted. This aeration is key to a fluffy texture. (Approx. 5-7 minutes)
Step 7
Sift the 160g cake flour (rice flour) and 1/2 tsp baking powder into the whisked egg mixture. Using a spatula, gently fold the dry ingredients into the wet ingredients by lifting from the bottom of the bowl upwards. Avoid overmixing, as this can deflate the batter and result in a dense cake. Mix just until no dry flour streaks remain.
Step 8
Add the 20g butter, melted in the microwave (about 20-30 seconds), and 20g grapeseed oil to the batter. Gently fold them in with the spatula, again being careful not to deflate the mixture. Ensure the butter and oil are evenly incorporated.
Step 9
Gently fold in the prepared chopped onion, ham, and chili pepper. Since there are quite a few ingredients, mix only 3-4 times until they are evenly distributed throughout the batter. You’ll see the beautiful, colorful mix of vegetables appearing.
Step 10
Pour the batter into your prepared cake pan. Tap the pan firmly on the counter 2-3 times to release any large air bubbles. Bake in a preheated oven at 180°C (350°F) for 30 minutes. About 10 minutes into baking, sprinkle the 4 Tbsp of corn kernels evenly over the top of the cake for decoration. This adds a lovely visual appeal and taste. Baking time and temperature may vary depending on your oven.
