Super Simple Vietnamese Spring Rolls Using Leftover Kimbap Ingredients
Try making these nostalgic Vietnamese spring rolls that were a favorite since school days! This is an incredibly easy recipe that uses leftover kimbap ingredients and a few common vegetables from your fridge. No need for special preparations to create a rich and colorful meal.
Main Ingredients
- 18 sheets Rice paper wrappers
- 6 sticks Kimbap-style ham
- 6 strips Pickled radish (danmuji)
- 3 sticks Imitation crab meat
- 9 leaves Perilla leaves (kkaennip)
- 5 leaves Lettuce
- 1 Bell pepper
- 1/2 Cucumber

Cooking Instructions
Step 1
First, wash the bell pepper thoroughly, remove the seeds, and julienne it into thin strips. Using bell peppers of various colors will make the rolls more visually appealing.

Wash the lettuce under running water, pat it dry, and then julienne it into thin strips, similar to the bell pepper. Wash the cucumber, remove the seeds, and cut it into long, thin strips. Cucumber adds a refreshing crunch.

Wash the fresh perilla leaves clean, trim off the stems, and then cut them in half lengthwise. The aromatic flavor of perilla leaves will enhance the overall taste of the spring rolls.

Cut the imitation crab sticks lengthwise into halves, and then cut each half into three equal pieces. This cutting method makes them easy to handle and visually pleasing.
