Step 1

For this recipe, we’ll be making a colorful and nutritious Cobb Salad using chicken breast, boiled eggs, fresh tomatoes, sweet corn, vibrant bell peppers, and crisp lettuce. Let’s get started on this visually appealing and delicious salad!

Step 2

First, let’s prepare the eggs for the Cobb Salad. Place the eggs in a pot of boiling water and cook for about 8 minutes until they are hard-boiled. While I personally enjoy a soft-boiled egg, a hard-boiled egg holds its shape better in a Cobb Salad. Once cooked, cool the eggs in cold water, then peel them.

Step 3

Now, let’s prepare the bell peppers to add beautiful color to our salad. My refrigerator happens to have orange and yellow bell peppers today, which will work wonderfully. I personally find orange bell peppers to have the sweetest flavor! Remove the stems and seeds from the bell peppers, then dice them into bite-sized cubes. Using a variety of colors will make your salad look even more appetizing.

It’s important to wash the crisp lettuce thoroughly. Fill a large bowl with water and add a splash of vinegar. Let the lettuce leaves soak for about 10 minutes to sanitize them. Afterwards, rinse each leaf under running water and gently pat them dry. To preserve as many vitamins as possible, it’s best to tear the lettuce by hand into large pieces rather than cutting it with a knife.

Fresh tomatoes will add a refreshing burst of flavor to the salad. Wash the tomatoes, remove the stem, and then cut them into wedges, about 4 or 6 pieces per tomato. Cutting them too small might diminish the texture, so aim for a good bite-size piece.
