Vibrant Beet and Tofu Rice Bowl
A Visually Stunning Tofu Rice Bowl with Beets

Introducing a beautiful and healthy Beet and Tofu Rice Bowl recipe! This dish features fresh vegetables and tender tofu stir-fried with a savory soybean paste sauce, making it a satisfying meal that everyone, young and old, will love. This simple yet visually striking recipe is sure to brighten up your dining table!
Main Ingredients- 1 block Tofu (approx. 300g)
- 1/2 medium Onion
- 1/3 medium Zucchini
- 1 King Oyster Mushroom
- Small piece of Beet (for color, optional)
Seasoning- 1 Tbsp Korean Soybean Paste (Doenjang)
- 1 tsp Sesame Oil
- 1 Tbsp Korean Soybean Paste (Doenjang)
- 1 tsp Sesame Oil
Cooking Instructions
Step 1
Gently mash the tofu using the back of a knife. It’s best to leave some texture rather than mashing it too finely.

Step 2
To remove excess water from the mashed tofu, place it in a cheesecloth or a fine-mesh sieve and gently press to drain. This step ensures the tofu cooks up fluffy and separated when stir-fried.

Step 3
Heat 1 Tbsp of perilla oil in a pan over medium heat. Add thinly sliced onion and stir-fry until translucent and fragrant. Once the onion releases its aroma, add the zucchini, cut into bite-sized pieces, and sauté until lightly browned with the onion.

Step 4
When the zucchini is slightly tender, add the sliced king oyster mushroom and stir-fry together. Once the mushrooms soften, quickly add the thinly sliced or julienned beet and stir-fry. The beet will quickly impart a beautiful pink hue to all the vegetables.

Step 5
Add the drained mashed tofu to the pan. Stir and break up the tofu as it cooks with the other ingredients. Gently break apart any clumps with your spatula to ensure the tofu cooks evenly and remains fluffy. Finally, add 1 Tbsp of Korean soybean paste and stir-fry until all ingredients are well combined and seasoned.

Step 6
Just before turning off the heat, drizzle in 1 tsp of sesame oil for a nutty aroma. Stir well to finish. Your beautiful and delicious Beet and Tofu Rice Bowl is now ready! Serve generously over warm rice and enjoy.
