Main Ingredients

  • 1.5 cups White Rice
  • 1.5 cups Shirataki Rice
  • 1/2 Beet, finely diced
  • 1 small can Tuna, drained
  • 1 block Tofu Fish Cake or Tofu Stick
  • 5 strips Sushi Pickled Radish (Takuan)
  • 5 strips Sushi Seasoned Burdock Root
  • A pinch of Seaweed Flakes (Gim Gaseu)

Onigiri Seasoning

  • 1 tsp Salt
  • 1.5 Tbsp Sesame Oil
  • 1 Tbsp Toasted Sesame Seeds
  • 1 Tbsp Black Sesame Seeds

Cooking Instructions

Step 1

First, prepare to cook the rice. Rinse and combine the white rice and shirataki rice in a 1:1 ratio. For this recipe, we used 1.5 cups of each. Using shirataki rice makes the rice fluffier and lowers the calorie count, making it excellent for dieting.

Peel the beet and dice it very finely. Place the diced beet on top of the mixed rice and shirataki rice. Cook the rice using slightly less water than you normally would. The beet will infuse the rice with a beautiful red color.

Prepare one of the star toppings for the onigiri: the tofu fish cake. This recipe uses store-bought tofu fish cake (approximately 55% tofu, 20% fish paste, and the rest vegetables). Since tofu is the main ingredient, it’s a great choice for a light meal during a diet. (See photo for preparation details.)

Slice the prepared tofu fish cake into bite-sized pieces or your desired shape. Similarly, cut the sushi pickled radish and seasoned burdock root into similar lengths.

Now, let’s lightly pan-fry the sliced tofu fish cake. Lightly oil a pan and cook the tofu fish cake on both sides until golden brown. If you like, sprinkle some dried parsley for added flavor.

Once the rice is cooked, transfer it to a large bowl. Add the seasoning ingredients for the onigiri: salt, sesame oil, and toasted sesame seeds. Mix gently to combine and season evenly. It’s important to mix carefully to avoid mashing the rice grains.

Add the drained tuna and black sesame seeds to the seasoned rice and mix well. The savory tuna and the popping texture of the black sesame seeds will blend with the rice, making it even more delicious.

It’s time to shape the onigiri. You can use an onigiri mold or your hands. First, place a portion of the prepared tofu fish cake inside the mold. This way, the topping will be in the center of the onigiri, making it visually appealing and tasty.

Add a portion of the seasoned rice on top of the tofu fish cake. Use the mold or your hands to firmly press and shape the rice into a round, compact onigiri.

Because the shirataki rice and regular rice are mixed and have good stickiness, the onigiri will hold their shape easily and stay firm. Don’t worry about them falling apart!
