Beetroot Dressing Ingredients
- Mayonnaise 4 Tbsp
- Lemon juice 1 Tbsp
- Syrup (honey or corn syrup) 3 Tbsp
- Mayonnaise 4 Tbsp

Cooking Instructions
Step 1
Prepare 2 packs of salad greens mix. Place them in a colander and rinse thoroughly under running water. Gently shake off excess water, ensuring the greens are well-drained. Properly draining the greens is key for a crisp and fresh salad.
Step 2
Peel one orange and cut it into bite-sized pieces. You can also add other fruits like strawberries or blueberries to this salad for added flavor and texture variation.
Step 3
Wash, peel, and finely dice 50g of beetroot. Place the diced beetroot into a blender (I used a hand blender, but any blender will work). Add 4 Tbsp of mayonnaise.
Step 4
Add 3 Tbsp of syrup and 1 Tbsp of lemon juice to the blender with the beetroot and mayonnaise. Blend until the mixture is smooth and creamy. Taste the dressing and adjust the sweetness or tanginess by adding more syrup or lemon juice, if desired.
Step 5
Arrange the drained salad greens on a serving plate. Top with the prepared orange pieces. Serve the beetroot dressing in a separate small bowl. Drizzle the dressing over the salad just before serving and toss gently. Enjoy your beautiful and healthy salad!
