Carrot Cheese Pancakes / Kid-Friendly Snack Recipe
Carrots, a root vegetable that many children shy away from, can be transformed into this beautiful and delicious pancake! This recipe was born out of a desire to find a way to get my younger child, who wasn’t fond of carrots, to eat them. These pancakes are crispy on the outside, tender on the inside, with a delightful combination of sweet carrots and savory cheese. They make a perfect nutritious snack for kids or even a delightful appetizer for adults.
Main Ingredients- 1 medium carrot
- 100g mozzarella cheese
Pancake Batter Ingredients- 1 cup pancake mix (approx. 120g)
- 4 Tbsp grated Parmesan cheese (approx. 30g)
- 1 cup water (approx. 200ml)

Cooking Instructions
Step 1
First, let’s prepare the batter for our pancakes. In a wide bowl, add 1 cup of pancake mix.

Add 4 tablespoons of grated Parmesan cheese to enhance the flavor.

Pour in 1 cup of water and mix everything thoroughly until you have a smooth, lump-free batter. Ensure the consistency is neither too thin nor too thick.
Step 4
Prepare the main ingredient, the carrot. Wash and peel 1 medium carrot, then julienne it into thin strips. Cutting them not too thick will make them easier for children to eat.
Step 5
Add the julienned carrots to the prepared batter. Mix well so that the carrots are evenly coated with the batter. Ensure the carrots are well incorporated.

Now, heat your pan over medium heat. Add a generous amount of cooking oil, such as canola or vegetable oil. Plenty of oil is key to achieving crispy pancakes.

Scoop spoonfuls of the batter onto the heated pan, forming them into bite-sized portions. Round shapes look especially appealing. Cook until the bottom side is golden brown and the edges start to crisp up, then it’s time to flip.

Once the bottom is nicely browned, carefully flip the pancakes. After flipping, generously sprinkle 100g of mozzarella cheese over each one. Try to keep the cheese mostly in the center to prevent it from overflowing too much.

Immediately cover the pan with a lid after adding the cheese. This steaming effect will help the cheese melt beautifully.

Cook on low heat just until the cheese is fully melted and the pancakes are cooked through. Be careful not to overcook, as this can make the pancakes tough. Your delicious Carrot Cheese Pancakes are ready!

While they are delicious on their own, consider serving them with some baby greens if you have any on hand. The fresh greens add beautiful color, a pleasant crunch, and extra nutrients, making the meal even more delightful and visually appealing.
