  • 1/3 Tbsp Salt
  • 1 Tbsp Mustard (whole grain or sweet)
  • 3.5 Tbsp Olive Oil
  • 2/3 Tbsp Sugar
  • 1 Tbsp Lemon Juice
  • Pinch of Black Pepper

Cooking Instructions

Step 1

Prepare 3 fresh carrots. First, wash the carrots thoroughly. Then, use a vegetable peeler to thinly shave the carrots. Stack these thin shavings on top of each other and slice them thinly into matchsticks. If you have a mandoline slicer, it can help you achieve a more uniform cut.

Season the julienned carrots with 1/3 Tbsp of salt. Let them sit for about 10 minutes. This step draws out excess moisture, which will make the carrots extra crisp. Allow the seasoning to meld for this period.

Do not rinse the carrots after salting! The liquid released during seasoning is crucial for the flavor and texture. Now, let’s make the dressing. Combine 1 Tbsp of mustard (you can use whole grain or sweet mustard, or regular mustard if that’s what you have), 3.5 Tbsp of olive oil, 2/3 Tbsp of sugar, 1 Tbsp of lemon juice, and a pinch of black pepper directly over the carrots. Gently toss everything together using a spoon or by shaking the bowl until the carrots are well coated with the dressing. The natural moisture from the carrots will combine with the dressing to create a delicious ‘laap’.
