Main Ingredients

  • 2/3 Carrot (approx. 50-60g)
  • 3 Eggs
  • Seasoned Tuna (pre-mixed with canned tuna, mayonnaise, pepper to taste) 10-12 Tbsp
  • 8 sheets Rice Paper
  • Vegetable Oil (for egg crepes and stir-frying carrots)

Sweet & Spicy Soy Dipping Sauce

  • 1/2 Tbsp Sugar
  • 1/2 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Vinegar
  • 1 Tbsp Toasted Sesame Seeds

Piquant Wasabi Sauce

  • 5g Wasabi (adjust to your preference)
  • 1 Tbsp Soba Noodle Concentrated Tsuyu (Japanese dipping sauce base)

Cooking Instructions

First, prepare the carrots. Wash them thoroughly, trim the ends, then slice them diagonally into about 2-3cm lengths. Next, julienne them into thin strips. This ensures even cooking and a pleasant texture when stir-fried.

Crack the 3 eggs into a bowl. Gently whisk them with a fork or whisk until the yolks and whites are well combined, avoiding creating too much foam. You can add a pinch of salt or pepper to the egg mixture if desired.

Preheat a non-stick skillet over medium-low heat and lightly coat it with vegetable oil. Once preheated, pour half of the whisked egg mixture into the pan. Swirl the pan gently to spread the egg thinly and evenly across the surface. Making thin crepes makes them easier to roll later.

Before the egg crepe overcooks, fold the edges in 2-3 times. Once it reaches your desired shape, turn off the heat. Use a spatula to gently press down and shape it. Cut the prepared egg crepes into bite-sized pieces, about 2cm wide strips. Now, it’s time for the rice paper. Fill a wide, shallow dish with lukewarm water. Dip one sheet of rice paper into the water for about 10-20 seconds until it becomes pliable. Be careful not to oversoak, as it can tear easily. Gently shake off any excess water.

Lay the softened rice paper sheet flat on your work surface. Place a portion of the sliced egg crepe, stir-fried carrots, and seasoned tuna in the center. Fold the bottom edge of the rice paper up over the filling, then fold in the left and right sides like an envelope. Finally, roll it up tightly from the bottom. Rolling it like a spring roll or sushi roll will create a neat shape.

Now, let’s make the sweet and spicy soy sauce! In a small bowl, combine 1/2 Tbsp sugar, 1/2 Tbsp gochugaru, 1 Tbsp soy sauce, 1 Tbsp vinegar, and 1 Tbsp toasted sesame seeds. Stir until all ingredients are well incorporated. You can adjust the seasoning to your taste.
