Rice Cake Dough Ingredients

  • 6 cups glutinous rice flour (Meplsal-garu)
  • 2 Tbsp strawberry powder
  • 2 Tbsp pumpkin powder
  • 1 Tbsp green tea powder
  • 120-150ml milk per dough batch (adjust as needed)

Sugar for Dough

  • 12 Tbsp sugar (4 Tbsp for each color batch)

Sweet Raspberry Sauce

  • 1/2 cup raspberry juice
  • 1-2 Tbsp powdered sugar (adjust for consistency)

Cooking Instructions

Step 1

First, divide the 6 cups of glutinous rice flour into three separate bowls, with 2 cups in each. Add the strawberry powder, pumpkin powder, and green tea powder to their respective bowls. Sift them to prevent lumps and ensure even mixing. Next, gradually add 120-150ml of milk to each bowl while mixing with your hands, rubbing the ingredients together to form a dough. The amount of milk is crucial and should be adjusted based on the flour’s moisture.

The dough is ready when it holds its shape when squeezed into a fist without crumbling, and feels moist. If it’s too stiff, add a little more milk; if it’s too wet, add a bit more rice flour. Once the consistency is just right, pass each colored dough through a fine sieve. This step makes the rice cake exceptionally soft and smooth.

Now, mix the sugar into the sieved dough. Add 4 tablespoons of sugar to each of the green tea, pumpkin, and strawberry doughs, and mix thoroughly. The sugar will dissolve, sweetening the dough. Repeat this process for all the doughs. The green tea dough will already have a beautiful green hue, won’t it?

It’s time to steam the rice cakes! Fill a steamer with plenty of water and bring it to a rolling boil. Once boiling, line the steamer basket with a damp cheesecloth, place your cake mold inside, and carefully layer the prepared doughs in order: green tea, pumpkin, then strawberry. Cover and steam for about 30 minutes. Turn off the heat and let it steam for an additional 5 minutes to ensure the cake is cooked through and moist. While the cake is steaming, let’s make the delicious raspberry sauce. Pour 1/2 cup of raspberry juice into a small saucepan. Bring it to a boil, then stir in 1-2 tablespoons of powdered sugar, whisking until it thickens to your desired consistency. Your flavorful sauce is ready!
