Main Ingredients
- Whole wheat noodles 100g
- Crown daisy (Shungiku) a handful
- Lettuce several leaves
- Bell pepper (various colors) 1/4 each
- Cucumber 1/4
Spicy & Sweet Sauce
- Gochujang (Korean chili paste) 1 Tbsp
- Gochugaru (Korean chili flakes) 1.5 Tbsp
- Persimmon vinegar 2 Tbsp
- Maesil extract (plum extract) 1 Tbsp
- Oligodang (corn syrup) 1 Tbsp
- Sugar 0.5 Tbsp
- Sesame oil a little
- Gochujang (Korean chili paste) 1 Tbsp
- Gochugaru (Korean chili flakes) 1.5 Tbsp
- Persimmon vinegar 2 Tbsp
- Maesil extract (plum extract) 1 Tbsp
- Oligodang (corn syrup) 1 Tbsp
- Sugar 0.5 Tbsp
- Sesame oil a little
Cooking Instructions
Step 1
Boil the whole wheat noodles. Bring a large pot of water to a boil. Once boiling, add the noodles and let it come to a boil again. Then, add about 1 cup of cold water. Repeat this process of adding cold water two more times. This technique helps the noodles become chewier. The total boiling time is approximately 5 minutes. (Adjust cooking time according to your preference for noodle texture.)
Step 2
Drain the boiled noodles in a colander. Rinse them thoroughly under cold running water, gently rubbing them with your hands. This step removes excess starch, resulting in a firmer and more pleasant noodle texture.
Step 3
While the noodles are cooking, prepare your fresh vegetables. Thinly julienne the cucumber and bell peppers. Wash the lettuce and crown daisy, then tear them into bite-sized pieces by hand. These fresh vegetables will add a delightful crunch and vibrant flavor to your dish.

In a large bowl, combine the cooked noodles with all the sauce ingredients (gochujang, gochugaru, persimmon vinegar, maesil extract, oligodang, sugar, and sesame oil). Gently mix everything together until the noodles are evenly coated with the flavorful sauce.

Arrange the prepared vegetables attractively on a large plate or platter. Carefully place the sauced noodles on top of the vegetables, presenting it like a beautiful noodle platter.
