Stew Ingredients
- 1/8 head of well-fermented kimchi (aged kimchi recommended)
- About 10-15 Vienna sausages (adjust to your preference)
- 1 block of tofu (firm or stewing tofu)
- 1/2 onion
- 1/2 stalk of green onion
- 2 Enoki mushrooms (or shiitake mushrooms)
- 1 handful of oyster mushrooms
- 1 Tbsp tuna extract (or soy sauce for soup, fish sauce)
Kimchi Stew Seasoning Paste
- 0.5 Tbsp minced garlic
- 0.5 Tbsp red pepper flakes (add more for extra spice)
- 1 Tbsp soybean powder (for a richer flavor and aroma!)
- 1 Tbsp soy sauce
- 1 Tbsp red pepper paste (for spiciness and umami)
- 1 Tbsp cooking wine (to remove gamey odors and enhance flavor)

Cooking Instructions
Step 1
First, prepare the vegetables and ingredients for the stew. Dice the tofu into bite-sized pieces (about 2-3 cm). Make a few slits on the Vienna sausages or cut them in half to prevent them from bursting during cooking. Slice the Enoki mushrooms into quarters. Thinly slice the onion. Slice the green onion and chili peppers (both green and red) diagonally for color and a touch of heat.
Step 2
Cut the well-fermented kimchi into bite-sized pieces (about 2-3 cm). Using aged kimchi will give your stew a deeper and richer flavor.
Step 3
Place the sliced kimchi into a pot and add enough water to cover it. Bring to a boil and let it simmer for at least 10 minutes until the kimchi softens and the broth becomes flavorful.
Step 4
While the kimchi is boiling, combine all the seasoning paste ingredients (minced garlic, red pepper flakes, soybean powder, soy sauce, red pepper paste, cooking wine) in a small bowl. Mix them well until there are no lumps. This pre-mixed paste will ensure the flavors blend evenly.
Step 5
Once the kimchi has boiled sufficiently, add the sliced Vienna sausages, onion, and mushrooms (Enoki and oyster). Stir in the prepared seasoning paste and bring the stew to a boil over high heat.
Step 6
As the broth starts to bubble, add the diced tofu, green onion, and chili peppers. Be careful when adding the tofu to prevent it from breaking apart.
Step 7
Finally, add 1 tablespoon of tuna extract for an extra boost of umami. If you don’t have tuna extract, you can substitute it with soy sauce or fish sauce. Let it simmer for another 2-3 minutes for all the flavors to meld together.

Once the kimchi stew has simmered to your desired consistency, turn off the heat and serve. It’s delicious spooned over rice or enjoyed with a side of warm rice for a complete and satisfying meal!
