Vindam Namul (Korean Wild Spinach) Seasoned with Doenjang and Gochujang
Simple and Flavorful Vindam Namul Salad with Doenjang and Gochujang
An incredibly easy and refreshing Vindam Namul (Korean wild spinach) salad. This dish combines the savory depth of doenjang (fermented soybean paste) and the subtle spice of gochujang (Korean chili paste), creating a wonderfully balanced flavor profile. It’s quick to prepare and perfect as a side dish or for mixing with rice.
Ingredients
- 1 bunch Vindam Namul (thoroughly washed)
- 1 Tbsp Doenjang (Korean soybean paste)
- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1 Tbsp sesame oil
- 1/2 Tbsp Gochujang (Korean chili paste)
Cooking Instructions
Step 1
Start by thoroughly washing the Vindam Namul. If there are any tough stems, you can trim them off for a softer texture, though younger namul can be used with stems intact.
Step 2
Bring a large pot of water to a rolling boil and add 1 tablespoon of salt. Add the washed Vindam Namul to the boiling water. Using chopsticks, gently stir and blanch for just 30 seconds to 1 minute. Be careful not to overcook, as this will make the namul mushy.
Step 3
Immediately drain the blanched Vindam Namul into a colander and rinse it quickly under cold running water. This quick rinse helps to preserve the namul’s crisp, refreshing texture.
Step 4
Gently squeeze out as much excess water as possible from the namul. In a mixing bowl, combine the drained namul with 1 tablespoon of doenjang, 1/2 tablespoon of gochujang, 1 tablespoon of minced garlic, 1 tablespoon of toasted sesame seeds, and 1 tablespoon of sesame oil. Mix everything together gently with your hands until the seasonings are evenly distributed.
Step 5
This simply prepared Vindam Namul salad is delicious on its own as a side dish, but it’s especially delightful mixed into a bowl of warm rice! The savory doenjang and mildly spicy gochujang create a harmonious blend that perfectly coats each grain of rice, making for a satisfying meal.
Step 6
Enjoy your wonderfully fresh and flavorful Vindam Namul salad, seasoned with doenjang and gochujang! Its vibrant taste and savory seasoning are perfect for stimulating your appetite, especially on days when you need a little culinary pick-me-up. Bon appétit!
