  • 70g Mozzarella cheese (adjust to your preference)
  • 2 Fresh eggs
  • 2 Triangular kimbap of your favorite flavor

Cooking Instructions

First, carefully separate the rice from the seaweed of the triangular kimbap. You can save the seaweed to wrap the fried rice later or use it as a garnish.

Break up the kimbap rice into loose grains, ensuring there are no large clumps. In a separate bowl, lightly beat the 2 eggs until the yolks and whites are just combined. Avoid over-beating.

Heat a frying pan over medium-low heat. Add the prepared kimbap rice and begin to stir-fry. Cook until the rice grains are fluffy and separate, being careful not to burn it. Continuously stir to prevent the rice from sticking to the pan.

Once the rice is nicely fried and fluffy, push the rice to one side of the pan, forming a small mound or ‘volcano’ shape. Carefully pour the beaten eggs into the center of the mound.
