You can make a delicious and light egg drop soup with just a few ingredients. It’s perfect for a quick meal that’s both nourishing and satisfying.
Main Ingredients- 2 large eggs
- 1 handful dried anchovies for broth
- 1 piece radish (about 5cm)
- 2-3 sheets dried kelp (about 5x5cm)
- 1 onion
- 2-3 Tbsp minced green onion
- 5-6 peeled and cleaned shrimp (optional)
Cooking Instructions
Step 1
First, pour about 5-6 cups (approx. 1L) of water into a pot. Add the dried anchovies, a chunk of radish cut into large pieces, and the kelp sheets to create the broth. (Remove the kelp after about 5 minutes of boiling to prevent a bitter taste.)
Step 2
Once the water comes to a boil, let it simmer on medium heat for about 10-15 minutes. This allows the delicious flavors from the anchovies and radish to fully infuse into the broth.
Step 3
After the broth has simmered, remove and discard all the anchovies, radish, and kelp from the pot. For an even clearer broth, you can strain it through a sieve.
Step 4
Peel the onion and slice it thinly into strips. Slicing it thinly helps its natural sweetness to dissolve well into the soup.

Crack the 2 eggs into a bowl. Remove the chalazae (the white stringy bits) and whisk them gently with a fork until smooth. Whisking the eggs smoothly ensures they cook evenly without clumping in the soup.

Add the thinly sliced onion to the clear broth and bring it back to a gentle simmer. Once the onion starts to turn translucent, slowly pour the whisked egg mixture in a thin stream around the edges of the pot. Avoid stirring immediately; let the egg cook undisturbed until set.

Add the cleaned shrimp. (Shrimp are optional, but they add a wonderful, refreshing depth to the broth.) Continue to simmer for about 2-3 minutes, or until the shrimp are cooked through and pink.

Finally, add about a handful of minced green onions. Season the soup with 2 tablespoons of salted fermented shrimp (saeujeot) for a savory umami boost – it makes the soup much tastier! Add a pinch of black pepper to finish. Let it simmer for another moment on medium heat.
