Main Ingredients
  • 2-3 sheets of rectangular fish cakes (Eomuk)
  • 1 piece of Korean radish (Mu), about 5cm long
  • 1/2 stalk of green onion (Scallion)

Seasoning & Broth
  • 1 Tbsp Korean soy sauce for soup (Guk-ganjang)
  • 1 Tbsp Anchovy sauce (or use anchovy-dashima broth)
  • 1 tsp Minced garlic
  • Pinch of salt (to adjust seasoning)

Cooking Instructions

Step 1

First, prepare your ingredients. Slice the Korean radish (Mu) into thin, half-moon shapes about 0.5cm thick. (I forgot to take a picture initially, but it’s best to have them sliced and ready!) Cut the fish cakes into bite-sized pieces, approximately 2x5cm, and slice the green onion diagonally.

Step 2

The secret to a refreshing broth! Prepare your broth. You can boil about 500ml of water with dried anchovies and dashima (kelp) for about 10 minutes, or use a pre-made broth pack. (If you’re only using anchovy sauce, you can start with 500ml of plain water.)

Step 3

Pour the prepared broth into a pot and add the sliced Korean radish. Bring to a boil over high heat. Simmer for about 5-7 minutes until the radish becomes translucent and tender. Cooking the radish first will infuse the broth with a refreshing flavor, creating a deeper taste.

Step 4

Once the radish is somewhat tender, add the sliced fish cakes and green onions. Next, season the soup with 1 tablespoon of Korean soy sauce for soup and 1 tablespoon of anchovy sauce. Add 1 teaspoon of minced garlic as well. Let it simmer a bit longer for all the ingredients to meld together. Taste the broth and add a pinch of salt if it needs more seasoning. You can also add a dash of black pepper for extra flavor, if desired.
