Ingredients

  • 700g red beans (pre-boiled and frozen in portions)
  • 1 cup glutinous rice flour
  • A pinch of salt
  • Sugar (or honey) to taste
  • Pine nuts for garnish (optional)

Cooking Instructions

Step 1

First, rinse the red beans thoroughly several times. I typically boil about 700g of red beans at once and then freeze them in portioned bags for later use. This makes preparing Patjuk so much quicker!

Step 1

Step 2

There’s no need to soak the clean red beans. Place the beans in a pot, cover with just enough water to submerge them, and bring to a rolling boil. Discard this water and strain the beans. This step is said to help remove any bitterness or impurities from the beans.

Step 2

Step 3

Now, it’s time to boil the beans until tender. Place the beans and water in a pressure cooker in a 1:1 ratio. Once the cooker starts to whistle on high heat, reduce the heat to low and let it cook for 40 minutes. This method ensures the beans become very soft and mushy.

Step 3

Step 4

Wait for the pressure to release naturally before opening the lid of the pressure cooker.

Step 4

Step 5

Transfer the cooked red beans to a blender. Add enough water to cover the beans, ensuring the water level is slightly above the beans.

Step 5

Step 6

Blend the beans and water until very smooth. It’s important to achieve a creamy consistency with no bean fragments remaining.

Step 6

Step 7

Gradually add the glutinous rice flour to the blended red bean mixture, stirring until you reach your desired porridge consistency. You can also use cooked and blended glutinous rice instead of flour. Adjust the amount of flour until it’s just right.

Step 7

Step 8

Now, let’s cook the Patjuk. Pour the blended mixture into a pot, add a pinch of salt for seasoning. Red bean porridge tends to stick to the bottom, so constant stirring with a whisk or spatula is crucial. Be mindful of the heat to prevent boiling over, and stir continuously as it simmers gently. Add sugar to sweeten to your preference.

Step 8

Step 9

Alternatively, you can sweeten your Patjuk with honey whenever you serve it. Adding honey just before eating can add a wonderful depth of flavor.
