Main Ingredients

  • 160g Firm Tofu (cut into bite-sized cubes)
  • 2 Large Eggs (lightly beaten)
  • 1/2 Green Onion (thinly sliced)
  • 1 Tbsp Tuna Extract (or soy sauce for soup)
  • 0.5 Tbsp Minced Garlic
  • Pinch of Black Pepper

Broth Ingredients

  • 3 Cups Water (approx. 600ml)
  • 1 Dashi Pack (or tea bag)
  • 1 Piece Dried Kelp (approx. 5x5cm)
  • 1 Heaping Tbsp Miso Paste (approx. 20g)

Cooking Instructions

Step 1

In a pot, combine 3 cups of water, the dashi pack, and the dried kelp. Bring to a boil over high heat. Once boiling, immediately remove the kelp, and reduce the heat to medium-low. Let it simmer for 10 minutes to create a flavorful broth.

Cut the tofu into approximately 1.5-2cm cubes. Thinly slice the green onion.

Remove the dashi pack from the broth. Dissolve the heaped tablespoon of miso paste through a sieve into the broth to ensure no lumps remain. Once the miso is dissolved, add the 0.5 Tbsp of minced garlic and bring to a gentle simmer.

Add the cubed tofu to the pot, followed by the sliced green onions. Let it cook together.

When the miso soup comes to a gentle boil again, slowly drizzle the beaten eggs in a circular motion around the surface of the soup. Avoid stirring immediately after adding the eggs; let them cook undisturbed for about 10-20 seconds to form soft ribbons. Stirring too soon can break the eggs into small pieces, making the broth cloudy.
