- Mayonnaise
- 2 bowls of cooked rice
Sweet & Salty Chicken Mayo Sauce- 3 Tbsp soy sauce
- 1 Tbsp oyster sauce (optional, can be replaced with soy sauce)
- 1 Tbsp sugar (can substitute with honey or corn syrup)
- 1/4 onion, finely minced
- 1/2 Tbsp minced garlic
- A little green onion, finely chopped (for garnish)
- 3 Tbsp soy sauce
- 1 Tbsp oyster sauce (optional, can be replaced with soy sauce)
- 1 Tbsp sugar (can substitute with honey or corn syrup)
- 1/4 onion, finely minced
- 1/2 Tbsp minced garlic
- A little green onion, finely chopped (for garnish)
Cooking Instructions
Step 1
First, let’s prepare the leftover chicken. If you have chicken with bones, carefully remove all the bones and use only the meat. You don’t want to accidentally bite into a bone while eating! Shred the deboned chicken into bite-sized pieces. While you can gently warm it in a pan, if your chicken already has a coating or sauce, the easiest way to warm it is by microwaving it for about 1 minute until it’s pleasantly warm.
Step 2
Now, it’s time to make the delicious sweet and salty sauce! Heat a little cooking oil in a small pan over medium-low heat. Add the minced garlic, finely minced onion, and chopped green onion. Sauté until fragrant, about 1-2 minutes, until the onions become slightly translucent. Then, add the soy sauce, oyster sauce, and sugar. If you don’t have oyster sauce, you can increase the soy sauce slightly or use honey or corn syrup instead of sugar for a lovely sweetness. Stir everything together and let it simmer for a minute to meld the flavors. Your sauce is ready!
Step 3
Next, we’ll make a soft scrambled egg. Crack 3 eggs into a bowl and whisk them well. Heat a little oil in a non-stick pan over low heat. Pour in the whisked eggs and gently stir with a spatula or chopsticks until they form soft curds, similar to scrambled eggs. Be careful not to overcook them; you want them to be tender and moist.
Step 4
Finally, let’s assemble our beautiful Chicken Mayo Rice Bowl! Start by spooning a generous portion of warm cooked rice into a serving bowl. Arrange the soft scrambled eggs on top of the rice, followed by the warmed, shredded chicken. Now for the star – drizzle the prepared sweet and salty sauce over the chicken in a zigzag pattern. Add a swirl of mayonnaise to your liking. For an extra touch of flavor and texture, sprinkle some shredded seaweed on top. Your delicious Chicken Mayo Rice Bowl is complete! Enjoy your meal!
