Quick & Easy Pressure Cooker Jujube Tea Recipe for Seasonal Changes

Basic Ingredients- 400g dried jujubes
- 1 piece fresh ginger (approx. 30g)
- 10 cups water (approx. 2000ml)
Cooking Instructions
Step 1
First, prepare 400g of dried jujubes. Place the jujubes in a large bowl, add enough water to fully submerge them, and sprinkle about 1 tablespoon of baking soda over them. Gently swirl the bowl with your hands to evenly coat the jujubes. This step helps to clean the surface and remove any impurities.
Step 2
Next, rinse the jujubes under running water by swirling them 3-4 times. Drain them in a sieve and repeat the process of rinsing under running water and draining 2-3 more times. This thorough washing ensures a clearer and cleaner tasting jujube tea.

After washing, drain the jujubes well in a sieve to remove excess water. Properly draining prevents the jujubes from clumping together in the pressure cooker, ensuring even cooking.
Step 4
Transfer all the drained dried jujubes (400g) into a pressure cooker. Peel and thinly slice the fresh ginger and add it to the pressure cooker with the jujubes. Ginger adds depth of flavor and warming properties to the tea.

Pour 10 cups of water (approximately 2000ml), measured using a 200ml cup, into the pressure cooker. You can adjust the water quantity based on your preference; it’s fine to start with more as the tea will reduce during cooking.

Securely close the pressure cooker lid and bring it to a boil over high heat. Once the pressure indicator starts to whistle, reduce the heat to medium-low and continue to cook for 5 more minutes. This allows the nutrients from the jujubes to be fully extracted by the steam. After 5 minutes, turn off the heat and let the pressure release naturally.

When you open the pressure cooker, you might notice the jujubes have turned white. Don’t be alarmed! This is a natural reaction of the saponin compounds in jujubes when exposed to heat, and it’s perfectly safe. It’s actually a sign of their rich nutritional content.

Place a fine-mesh sieve over a large bowl. Ladle the cooked jujubes from the pressure cooker into the sieve. Use a spoon or ladle to gently mash the jujubes while pressing them against the sieve. This action will push the pulp and juice into the bowl below. Adding a little water while mashing helps the jujube pulp to pass through the sieve more easily.
Step 9
Discard the remaining jujube skins and seeds left in the sieve. Repeat the mashing and pressing process with any unmashed pieces to extract as much pulp as possible. Continue until only the clear jujube tea liquid remains in the bowl.
Step 10
Your delicious homemade jujube tea is now ready! Although the color is deep brown, the consistency is similar to a thin rice porridge or gruel, like baby food. It has a natural, subtle sweetness from the jujubes themselves, so no added sugar or honey is needed.

This tea can be enjoyed warm or cold. I personally prefer to let it cool slightly, then store it in a clean glass bottle in the refrigerator and drink it chilled.
