Main Ingredients

  • Somen noodles (for 1 serving)
  • Anchovy-Kelp Broth (700ml)
  • Ground Perilla Seeds (7 Tbsp)
  • Sweet Rice Flour (1 Tbsp)
  • Soy Sauce for Soup (2 Tbsp)
  • Fish Sauce (1 Tbsp)
  • Green Onion (10cm length)

First, prepare the somen noodles for one serving. Bring a generous pot of water to a boil. Add the noodles and stir gently to prevent them from sticking together. Once cooked to your liking, rinse them under cold water, drain, and set aside.

Pour 700ml of anchovy-kelp broth into a pot. Add 2 tablespoons of soy sauce for soup and 1 tablespoon of fish sauce to enhance the umami. If you don’t have homemade broth, using store-bought broth is also a great option.

Finely chop the green onion. Add the chopped green onion to the broth and bring it to a boil again. Taste the broth and season with salt if needed. For a little kick, you can add a touch of chili pepper at this stage.

Finally, stir in 7 tablespoons of ground perilla seeds and 1 tablespoon of sweet rice flour into the broth. Whisk vigorously with a whisk or spoon to prevent lumps as it simmers. The sweet rice flour will thicken the broth, making it richer and creamier. Once the soup begins to boil, immediately turn off the heat. Place the prepared somen noodles in a bowl, pour the hot broth over them, and briefly warm them by ladling the broth over the noodles in the bowl (this process is called ‘to-ryeom’ in Korean, meaning to pour hot broth over food to warm it).
