Seasoning Ingredients- Sugar: 1 Tbsp (adjust to 0.5 Tbsp initially based on kimchi’s sourness, then add more if needed)

Cooking Instructions
Step 1
Today’s star ingredient is perfectly fermented aged kimchi! You’ll need about 400g of it, which is roughly 1/8 of a head.
Step 2
We’ll start by washing the aged kimchi thoroughly. Since it contains a lot of red chili powder, it’s best to wash it under running water in your sink.
Step 3
While washing, pour out the water periodically. Hold the stem and gently shake the kimchi leaves to effectively remove the chili powder stuck between them. This makes the cleaning process much easier.
Step 4
If your aged kimchi tastes too salty, you can soak it in cold water for about 10-15 minutes before rinsing. This will help to moderate the saltiness to your preference.
Step 5
When squeezing out the water from the washed aged kimchi, avoid twisting it too forcefully. This can damage the texture. Instead, gently press it with your cupped hands to release excess water without making it mushy.

Cut the aged kimchi into bite-sized pieces. Then, gently tear them apart with your hands for a more natural texture. Tearing them into manageable pieces also makes them easier to eat.

Place the torn aged kimchi into a mixing bowl. Add 1 Tbsp of sugar and gently mix it in with your hands. The sugar helps to balance the sourness of the kimchi and enhances its umami flavor. Remember to adjust the sugar amount based on how sour your kimchi is.
Step 8
