Today, we’re making a whole roasted chicken using an air fryer! Remember those street carts selling electric rotisserie chickens for a couple of bucks? If you miss that delicious taste, why not try making it yourself? This air fryer version promises a crispy exterior and juicy interior, as excess oil drains away during cooking. We’ve added a savory soy butter rice stuffing, making it incredibly rich and flavorful! It’s perfect for a satisfying meal or as a delightful snack with a cold beer.

  • 1 whole young chicken (around 500g)
  • 1 serving cooked rice
  • 1/4 onion
  • 1.5 Tbsp soy sauce
  • 1 Tbsp butter
  • Olive oil, for brushing
  • Salt, to taste
  • Black pepper, to taste

First, let’s prepare the stuffing for the chicken’s cavity. Finely mince 1/4 of an onion. Aim for a consistent, fine dice so it mixes well with the rice.

In a bowl, combine 1 serving of cooked rice, the minced onion, 1 tablespoon of butter, and 1.5 tablespoons of soy sauce. Mix everything thoroughly until the butter is fully melted and well incorporated. The blend of soy sauce and butter will add a wonderful savory depth to the rice.

Rinse the whole chicken under cold water and pat it dry. (We recommend a young chicken, about 500g, like the Twin Chicken from E-mart). Using kitchen scissors, trim the tips of the wings as they can burn easily. Also, remove the fatty part around the tail and the rear end of the chicken. This helps reduce excess grease and keeps the chicken looking neat while it cooks.

Generously stuff the prepared soy butter rice mixture into the cavity of the chicken. Ensure it’s packed well, as this helps maintain the chicken’s shape as it cooks. Don’t overstuff to the point where the chicken’s cavity is bulging excessively.

On one of the chicken’s legs, make two small slits in the skin. Tuck the other leg through these slits to secure them together. This simple step helps keep the chicken’s legs neatly together, presenting a beautifully shaped roast.

Now, give the entire chicken a good rub with salt. Massage it in so the salt is evenly distributed. Then, generously sprinkle black pepper all over. This seasoning will enhance the natural flavor of the chicken.

Finally, brush the entire skin of the chicken with a thin layer of olive oil. This will help the skin crisp up beautifully. Once prepared, place the chicken into your preheated air fryer.

If your air fryer is on the smaller side, the tips of the legs or the neck might touch the heating element. In such cases, you can trim them slightly before placing the chicken inside. Set your air fryer to 180°C (350°F) and cook for 20 minutes. This initial cooking period will start to crisp up the top side of the chicken.
