Whole Wheat Oil Pasta Ingredients

  • 200g whole wheat pasta
  • Olive oil
  • 5 cloves garlic (4 thinly sliced, 1 minced)
  • 4 dried red chilies (or bird’s eye chilies), or to taste
  • 1/2 onion, thinly sliced
  • Salt to taste
  • Black pepper to taste
  • Shrimp, as needed (optional)

Cooking Instructions

Fill a pot with water about halfway, add 1/3 tablespoon of salt, and bring to a rolling boil. Once the water is boiling, add the 200g of whole wheat pasta and cook for 8 to 10 minutes, just like regular pasta. Be careful not to overcook it.

While the pasta is cooking, thinly slice 4 cloves of garlic and mince the remaining 1 clove. Heat a generous amount of olive oil in a pan over medium-low heat. Add the 4 dried red chilies (or bird’s eye chilies), broken into pieces, to infuse the oil with their heat.

Allow the olive oil to gently heat and bubble, releasing the spicy aroma from the chilies. Keep the heat on medium-low to prevent the oil from burning.

Once the oil is fragrant, add the thinly sliced half onion and the shrimp (if using). Sauté until the onion becomes translucent and the shrimp turns pink and is cooked through.

Add the cooked whole wheat pasta to the pan with the sautéed ingredients. Pour in 2-3 ladles of the reserved pasta water. This starchy water helps to emulsify the sauce and makes the pasta wonderfully moist.
